Spicy Shredded Beef

Yum, yum, YUM! Okay so I hate when people completely recreate the recipe and then rate for good or bad. With that said I did make a few changes but I feel that they were slight enough that they did not alter the integrity of the recipe so I'll still rate. First of all I turn anything I can into a slow cooker meal. So I browned the meat just for a few minutes and then tossed it and all the ingredients in the slow cooker and cooked for several hours on low. I used a can of tomatoes with green chilies (instead of just tomatoes) and added a small amount (probably 1 tsp) of beef broth and around 2 tsps white sugar. I think those small changes augmented the flavor beautifully. I used a chuck roast cut up and I the slow cooker really helped get the meat to a nice tender state that shredded well. I mostly put in the sugar to neutralize the acidity of the tomatoes but it actually gave it just the slightest sweet taste which was so good! We used the meat for tacos with diced fresh tomatoes, cilantro and sour cream. Wow! My husband loved these and my almost 4 year old adored them. A winner for our family.

Chewy Brownies

These turned out just as described, "chewy in the middle and crisp on the outside edges." If you love chewey brownies these are for you! I HATE cake brownies so these were perfect for me. They compare quite nicely to box brownies, which from me is a compliment. I like to make things homemade though so this is my go to recipe for now! Oh the one change I did make was to drop the salt to 1/2 tsp. If you read the reviews you'll see the submitter said that 1 1/2 was a typo. Great recipe, thanks for sharing!

Almond Crunch Granola

Super yummy! I've made this a few times exactly as written and also subbed half the almonds for pecans once. I like it both ways and pretty much you could sub in nut. I chose this recipe because I pretty much like everything in it and I like that it doesn't have added sugar. I'm not a huge coconut fan and honestly found that it is more a filler than a major contributer to taste. I've also done both oven and microwaave methods and both work well. It's nice to be able to just pop it in the microwave and I think it tunrs out just as well. Just make sure to stir often. I didn't the first time and some in the middle ended up a little burnt.

Frozen Lite Chocolate Cheesecake Pie

This was super yummy and I am a huge chocolate eater! I used Weight Watchers fat free cream cheese so it even added some good for you fiber. I brought it to a friend's house and she and I loved it as did the three kids. I would have to say though even though it is "light" there it is still an indulgence. It satisfied my sweet tooth though :)

Slow-Cooker Chicken Tortilla Soup

This is one of my favorites for cold weather time. I've made this at least since last year and it is a favorite. I brought it to a church party once and it was a success and there were no leftovers. The only thing I change is to add a can of black beans and use diced tomatoes instead of crushed.

Authentic Louisiana Red Beans and Rice

I converted this to a crockpot meal just for convenience. I kept it cooking all day and added chicken kielbasa (we don't have the sausage called for in this recipe here) and cooked a few more hours. My husband is a southern boy and he loved it! His stamp of approval on a southern dish usually means it is top notch! The only thing I would change is to add 2-3 tsp of salt to bring out the taste.

Better Than Sex Cake II

I've been making this cake using pretty much the same recipe for years and I could not LOVE it more!!! One thing I do differently is to poke holes with a fork all over the cake instead of the slits. I think this helps it sink into the cake but not all the way to the bottom. The secret is to let it cool in the fridge for at least an hour. It lets all the carmel/sweetened condensed milk soak in!

Chewy Brownies

I took the advice of a few others and used only 3 eggs and a little more corn syrup and upped the cocoa to 1/2 cup. I love chewy fudgey brownies and I thought these were great! Not quite like boxed brownies but as close as I have come. I also added a little wheat flour in place of white. I felt that the wheat tastes was covered up pretty well (I'm always looking for ways to sneak wheat in). My husband thought you could still taste the wheat too much but he still ate half of them :) Just an idea if you're trying to make things just a tad healthier.

The Best Lemon Bars

I used 1 1/2 times the filling the recipe calles for and used a 9 x 13 and add more lemon juice (around 2/3 cup total) as others have suggested. Sprinkle with sifted powdered sugar and they are absolutely AMAZING!!! Thanks for a super yummy recipe!

Soft Sugar Cookies V

BEST EVER!!! I have been searching for a good sugar cookie recipe and my trail ends here. They are so easy to manage and hold their shape well when cooked. The best part is how soft they are. I despise crunchy cookies and these are moist and tender, even a few days later. I've used plain yogurt in place of sour cream and half splenda and they turn out wonderfully. I've tried more splenda and I don't know if that ruined them but they came out bland and weird. Can't rave about these enough!

White Chicken Enchilada Slow-Cooker Casserole

I've been making a similar dish in a casserole pan for years and we love it in our house. One easy thing to do with the tortillas we've discovered is to put them on a cutting board and cut them into smaller peices with a pizza cutter. It's faster than tearing them by hand.

Kielbasa and Cabbage

I'd have to say that you have to at least like cabbage to like this recipe. I loved it! My husband wasn't as fond, but he doesn't really like cabbage that much. I've made it a few times, with and without the carraway and I actually do prefer it with, but I cut the amount in half.

Cinnamon and Lime Chicken Fajitas

I am not one much for "interesting" tastes and was hesitent to try this, with the cinnamon but am glad that I did. I've made these a few times now and I think I like them better and better everytime. I cook my chicken in the slow cooker so it is really tender and easy to shred. Another thing that seemed odd to me was the potatoes and yet I love the extra touch. Yum!!!

Italian Chicken and Chickpeas

I don't know if I did something wrong but I just did NOT like this and either did my husband. The tomato flavor was just weird with the beans and tasted like it should be over pasta and not beans. I usually like recipes off this site that are rated well so I was surprised at this.

Easy OREO Truffles

YUM! So not healthy for you but a fab treat every once in a while. My Mother-in-law made these for us for a couple of years and I just made some this year for neighbor/friend treats. I found a few key things to do that made them really easy. First of all I ground the oreos in my food processor in batches (my processor isn't big enough to hold them all). Then after trying to mix the oreos with the cream cheese I found it easier and more efficient to mix in my food processor, again in batches. As a previous reviewer suggested when it is really smooth and starts to ball up it is ready. I then chilled for about an hour, rolled them out, chilled again for about 30 minutes and had no problems dipping in the chocolate. The smooth consistency from processing them I really think made all the difference.

Cranberry Salad IV

My mom made this all while we were growing up and I can't get enough of it. I HAVE to make it every TG and Christmas now. I never chilled all mine separately though. I blend the cranberries in a bleder with the sugar then mix everything and chill for an hour plus. We also always added chopped walnuts. I'm not a marshmallow fan so now that I make my own I leave those out and it is still delicious!

Chicken Tikka Masala

I actually got this recipe from a friend a few months ago and it became an instant top 5 favs for my husband and I!!! I LOVE Indian food though and this tastes to similar to my favorite Indian restaurant. The only thing I've changed (based on my friend's suggestion) is to only use 1 tsp of salt in the marinade and sauce. I think I'm adding this to my menu this week!
