Lime Chicken Soft Tacos

Reviewed: Oct. 30, 2001
We love these tacos! All five of our kids loved the chicken, it reminds us of Carne Asada. We plan on adding this to our weekly menu.

Rempel Family Meatloaf

Reviewed: Nov. 18, 2006
This was the best meatloaf I've ever had! My husband does low carb so I substituted crumbled pork rinds for the crackers and it was still fabulous!

Roasted Brussels Sprouts

Yuck! I had my hopes up after reading all the reviews and I was really disappointed. My husband did eat it but he didn't want to save the leftovers. I couldn't even choke two down.

No Bake Peanut Butter Pie

Reviewed: Nov. 24, 2006
This was so good. When I read the ingredients I thought it sounded awful but the reviews made me want to try it and all my kids LOVE peanut butter so I thought I'd give it a go. Well it was the hit of Thanksgiving! A definite keeper, I bet it'll be especially good on a hot summer day. I can already see my kids begging me to make this. I did get asked for the recipe. YUMMY. Thanks for sharing.

Pie Crust III

Reviewed: Nov. 24, 2006
This was a nasty mess. I couldn't even roll it and ended up having to send my husband to the store for some frozen pie crust. On the positive side my chickens loved it. It had the consistency of wet sand. What a waste of time & money! Luckily the whole thing was cracking me up why would I think this would be good? Don't try, it's horrible.

Stuffed Peppers

Reviewed: Jan. 19, 2007
These were really good. My husband thought they were the best stuffed peppers he's ever had! I did change a few things. I didn't use rice, instead I used 2 shredded zucchini, I also added about 1/2 cup of parmesan cheese to the meat mixture. I also added some garlic powder to the tomato sauce that tops the peppers. I baked them covered for 45 minutes, like another poster recommended, then I uncovered the last 15 minutes and toped with some more parmesan. Thanks for the fabulous recipe, I'll be making these often.

Taqueria Style Tacos - Carne Asada

Reviewed: Mar. 27, 2007
These tacos are so good! Better than a taqueria, way better! I did make some changes, here's what I suggest: Cut the meat up first before you marinade it, it's a lot cleaner that way and the fabulous flavor gets on every piece. Also the salsa isn't necessary but the onion relish is, it's really great. I've made this twice, once using the skirt steak (the best) and the other time using a cheap london broil, cut up into tiny little pieces. The cheap cut took about 45 minutes to cook all the juices down but it was still really good. This is a keeper! :-)

Irish Boiled Dinner (Corned Beef)

Reviewed: Apr. 4, 2007
This is the best corned beef recipe! It's so simple and good. My husband is always ready to eat this corned beef. I serve it with a horseradish cream sauce: 1/2 Sour cream, 1/2 mayo, 2 tablespoons horseradish sauce and 1 tablespoon dried parsley. Combine ingredients and let flavors blend in the refrigerator.
