Chili Seasoning Mix II
Thank you. This is an easy to make and flavorful mix. I'll never pay $2+ again for a few teaspoons of seasonings. I cook and bake gluten free so I experiment a lot. Because of that, I bought a one pound bucket of maltodextrin (it's inexpensive, very light and fluffy and as such, comes in a container bigger than a one gallon paint can). I'ts just highly refined tapioca starch that completely dissolves in water without adding any taste or texture. I substituted that for the flour. I suppose you could also use tapioca starch as a medium or actually use nothing. It's really not necessary at all. It's a seasoning mix. I added some other ideas to my blend from reviewers because his is one of those very "customizable" recipes. Thanks again for sharing this idea.

Peanut Butter and Pumpkin Dog Treats
I just made this gluten free for my girls and they turned out great! I used a 1/2 inch apple corer for the cutter. I used all purpose GF flour plus a 1/2 cup of oat flour; 1 extra Tbsp peanut butter, 1 cup pumpkin; 4 Tbsp water (to start) and blended it in a food processor until I had a smooth ball the consistency of actual cookie dough. This recipe made about 300 treats. Keep in mind, I'm a hack baker.

Fresh Tomato Salsa
Oh my, this is GREAT! 6-Stars. Thank you so much. It was much tastier the next morning after chilling overninght. I added a tablespoon of olive oil and a teaspoon of salt and one of sugar and cut back a little on the cilantro (personal taste) and used ten roma tomatoes. These additions mellows it out a bit and the oil enhances the flavors. It still has a great bite. - What a great stand-alone or base recipe for customizing. Lots of liquid. Great to chase down your morning eggs with. - Next batch I'll seed the tomatoes and use jalapenos for a milder version. Thanks again.
