Tender Italian Baked Chicken

This mixture for the coating? It's AMAZING. Now I ran out of mayo when I made it, so I ended up thinning it with milk and using it more like a traditional egg-wash. But it still tasted incredible! I also had enormous, bone-in chicken breasts; just adjust your time to get the meat cooked through. The breading gets nice and crispy and golden brown. Another review mentioned that the mayo would get all runny - I didn't find that to be the case, in fact the pan was much less greasy than I expected. The meat was tender and juicy and the crust was just enough crunchy!

Breakfast Grits

Thank you so much for posting this recipe! My husband grew up with grits & eggs as a breakfast staple, and I'd never heard of them before we got married! This is a much easier and more reliable method than the instructions on the package, too.

Middle Eastern Rice with Black Beans and Chickpeas

SO DELICIOUS! I make this twice a month now, after I made it this summer for the first time...and every time I make it, there are no leftovers! It's just amazing. For those who are like me and tend to scorch your spices rather than toasting them, I found that you can work around that. Add the spices that are listed for the rice, straight into the meat after you've cooked it; the rice will still get that great yellow color. The flavors aren't quite as intense, but it's a lot easier for some of us :)

Red Cabbage

I made this for an Oktoberfest themed dinner party; it was the second most popular dish on the table next to the meat course! Several of my guests said they had never had a cabbage dish they enjoyed before this! The only thing I added was a teaspoon of caraway seed, which is a natural source of simethicone...I feel like it's really a requirement for anything involving cabbage for me and my family. But its flavor is pretty subtle, and in this case it didn't clash with the other spices at all!

Scrambled Egg Muffins

Made these for a weekend when I had a few friends as houseguests and they were a huge hit! I made several batches because of differing tastes. I'd say go easy on the salt, because adding the cheese also adds some salt, and my first batch with cheese in them was REALLY salty. But they were still popular!

Paprika Chicken with Mushrooms

Tasted fantastic! I found that I could "cheat" a little and use frozen chicken breasts and canned mushrooms for this. It would be probably be a slightly different flavor with fresh, but those are hard to get in my area (well, good ones anyway). Very easy to make, too! My son could even handle most of the steps!

African Chicken Stew

I made this, and possibly made a mistake by not using natural peanut butter but just regular peanut butter. I thought it tasted delicious...but my family did not agree. If your diners don't enjoy a touch of sweet with their meat, I'd recommend using an unsweetened peanut butter (which it says in the recipe anyway!). But a good, easy dish to make and very warming on a cool day.
