Rhubarb Strawberry Crunch

Yum, yum, yum! There is a lot of topping. When we put the dish in the oven, the topping was only about 1/3 the thickness of the entire dish' but after baking, because the fruit cooked down so much, the topping was more like 3/4 of the thickness of the dish. My family did not mind at all ;) but I would use less topping next time. (We didn't even use all the topping; we put some aside - about a cup - to bake on top of berries later this week.)

Amazing Sugar Cookies

Sorry for the bad rating! I'm not actually a bad cook, but I guess I wasn't focused enough while making this recipe. The dough came out all crumbly, though it clumped quite nicely. Did I miss something important?? The cookies didn't turn into cookie shapes. They were balls. Crumbly balls of cookie dough. Goodies. My only explanation is that I didn't soften the butter first and therefore messed up my cookies. These certainly TASTE delicious though! (I think I'll try a different recipe next time...)

Mango Spring Roll

I made dim sum for my family, looked around for a bunch of appetizers/desserts, started cooking at around noon, and had dinner served at around 5:30 (with the gelato still in the machine, but we were going to have that last anyways). These spring rolls, possibly the first fried thing I've made by sticking them in a pot full of boiling oil, turned out g-r-e-a-t! It might help that I love mango, and so does my family, but we all loved them. It was the overall favorite of that dinner (I think they liked the edamame dumplings better, but I hated them, so that makes them drop down in overall popularity :P). One thing I noticed is that they were hot, and hot mango isn't the BEST thing ever. That's why I gave it 4 stars.. But dapan - this is a good recipe! I think it's the best possible way to serve mango... in a spring roll. :P

Fudge

Okay... So I just used up all my characters on this long, detailed review, and I clicked submit, and it didn't do anything. It didn't post on the site, I didn't get any notifications... So I'm guessing I just lost it :( This is definitely a crowd pleaser. People who say they don't like peanuts decide they like it when they timidly try the peanut butter fudge, everyone asks for the recipe, that kind of thing. I love sweet stuff, so the chocolate fudge I made (using semisweet chips in a half peanut butter-half chocolate batch) was a bit bland. Good, but not worth the calories. The peanut butter though... Man, that was goooooooood! Recently though, I made an insanely delicious batch of chocolate fudge. I was confused for a while but now I have a conclusion! The time that the chocolate fudge wasn't so great was when I did a half and half batch. Maybe I put more sweetened condensed milk into the peanut butter fudge than chocolate??? Well, I also have some tips: #1: If the fudge comes out kind of grainy, you might not have set the power level to medium. If you catch yourself cooking the fudge on high, take it out of the microwave, mix it up until it's smooth, set the power level on medium, and keep on cooking! #2: I would suggest a half and half recipe, because peanut butter and chocolate taste amazing together!!!! Also, the sweetness of the peanut butter fudge balances out the semi-sweet chocolate fudge.. LOVE THIS RECIPE!!!!!!!!!!!!! Oh - and I don't put walnuts in it :)
