Stuffed Hot Peppers

Reviewed: Jan. 14, 2009
I increased the amt of romano cheese. when preparing I thought this would be too spicy since the peppers were making my hands tingle, so I made some with green and yellow peppers. they were good both ways, but I liked the extra zest with the spicy peppers. Will make again!

Pumpkin Flax Quickbread

Reviewed: Nov. 17, 2008
For being healthy, this is a great recipe. I made two seperate batches. the first was not too good. i had the most success w/ the second batch. i used the applesauce (the first batch i used only pumpkin). i think the a/s gives it extra moisture. I also used more water in the second batch and it was much better. very easy and very good!

I following the recipe, but used triple chocolate cake mix, added 2 T oil, and approximately 1 1/2 cup shredded coconut. These were excellent and a huge hit!!! I think the coconut was the key to making these

Artichoke Chicken

Reviewed: Feb. 18, 2008
This was wonderful! I took other's suggestions and sauteed plain can of artichokes in italian dressing. I pan seared the chicken and poured the mixture on top. for the mixture i doubled the amount and used half mayo/sour cream, added @2 teaspoons capers, and dusted with paprika. I covered and refrigerated, then cooked the next day. This was a huge hit! I will make this again. Wonderful!!!

I also added lemon juice and substituted rosemary for the basil - much better flavor that was a great accent for the fish. I used low-cal/fat mayo and butter. this was wonderful and very easy!

Easy Granola Bars

Reviewed: Apr. 24, 2007
This is a great basic recipe! To cut carbs and calories, I used a can of evaporated milk and added @4-5 packets of splenda. 2 cups oats,1/2 cup dried cranberries, 1 cup each of soynuts, sunflower seeds, coconut, and almonds/pecans. I then crushed 85% dark cocoa bar on top instead of chocolate chips. A little messy, but wonderful!!
