Angel's Chunky Chicken Salad

I was shocked at how good this salad was. Will definitely make again! I finely chopped the onions and celery in a food chopper. I feel this made a difference.

Cottage Cheese Pancakes

LOVE these pancakes! I will never make regular pancakes again. I used 1/4 cup whole wheat flour (may increase a little), added vanilla and cinnamon. As a topping I used thawed frozen strawberries with the use as syrup for my picky 2 yer old. She loved these, as we did also. I also will try adding parm cheese and garlic to make as a side dish for a meal. EXCELLENT!

My Chicken Milano

Definitely not a five star, but this was very healthy and super simple! I used canned french cut green beans (no salt added), and I also added mushrooms. I used tons of seasoning garlic powder, garlic cloves and basil.

Dorsey's Fish & Oyster House Crab Cakes

These were very good! Used a sweet chili Thai sauce and they were great! I agree they could use more flavor, but the sauce did the trick. I like that there was very little breading so you could really taste the crabmeat.

Oatmeal Blueberry Muffins

I used whole wheat flour and added cinnamon. 1 1/2 cups blueberries. Next time will try using applesauce instead of oil and decrease the amount of sugar. good recipe for basic muffins.

Chewy Peanut Butter Brownies

I made a healthy version and this was wonderful!! Used splenda brown sugar and splenda. used Joseph's Sugar Free PB, low-fat butter and wheat flour. also added chocolate chips. Great!

I used plain yogurt instead of greek. next time will search harder for greek yogurt because the draining of the yogurt and cucumber was WAY too much work. very light flavor.

Stuffed Green Peppers II

I browned italian turkey sausage, added brown rice, two cans diced tomatoes (italian style), added balsamic vinegar, hot sauce and other seasonings. I cooked with spaghetti sauce (also added balsamic, hot sauce and basil). I cooked at 350 degrees for @45 minutes. these were great! Will definitely make again.

Corned Beef and Cabbage

this is what corned beef and cabbage should taste like!!! more flavor than most restaurants. I did not use the bay leaf or peppercorn since I felt the spice packet was sufficient. I put in the slow cooker on high for about 2 hours since I only had six hours to prepare. Once I decreased the heat to low, I added the veggies. Will make again!

Pork Chop 'n' Kraut Dinner

My husband said this was the best he has ever had! I seared the pork loin w/ garlic powder, salt and pepper. I put this on top of the potatoes, then added the jar of sauerkraut and brown sugar. let it cook for @8 hours and it was wonderful!

Stuffed Hot Peppers

I increased the amt of romano cheese. when preparing I thought this would be too spicy since the peppers were making my hands tingle, so I made some with green and yellow peppers. they were good both ways, but I liked the extra zest with the spicy peppers. Will make again!
