Slow Cooker Lime Chicken with Rice

Reviewed: Apr. 8, 2010
Added a can of Rotel with lime and cilantro, otherwise followed recipe. Very salty - next time will drain the tomatoes. I also added jerk seasoning since I heard from many this was bland. Rice cooked on the side, not in the cooker. this was SO EASY, so that is why I gave this a 4 star. Will make again and will continue to modify.

Mexican Mole Sauce

Reviewed: Feb. 17, 2010
HUGE hit!! Took to party and they raved it was even better than a restaurant. I doubled the sauce, used garlic powder, added extra cumin to taste. I poured on top of chicken/onion/celery/yellow and red peppers mix, let simmer about 10 minutes. Will make again!

Curried Coconut Chicken

Reviewed: Feb. 9, 2010
WOW! I made this dish almost vegetarian ( cutting back on meat). Used 4 tenderloins, one stalk of celery, large onion and large yellow pepper. Used Light Coconut Milk, and I wish I did not add the three Splenda packets b/c it was a little too sweet. I added more curry to taste. This will be a regular meal in our house!! PS - will make this vegetarian next time and add cauliflower.

Zucchini-Chocolate Chip Muffins

Reviewed: Feb. 8, 2010
YUM!!! SO glad I doubled the batch. Trust me, just do it! I made a few minor changes that made these healthier without compromising taste. The double batch made sixty mini-muffins. My modifications - I used whole wheat pastry flour, reduced the sugar to a little less more than 1/2 cup, used @1/3 cup veg oil and 1/2 cup apple sauce (for the double batch) Did not have walnuts but these were still great. I was hesitant about adding the lemon, but I really could not taste it. The minis took about 12 mins to cook. Now as long as my toddler can't see the green...

Authentic Middle Eastern Hummus (Chummus)

Reviewed: Feb. 2, 2010
If you are looking for good hummus that is somewhat similar to the store or restaurant, I recommend just giving up. I will never try making hummus again. I tried SO HARD. I used almost two cups of water for half a recipe, I followed the recipe and even added extra. Although it was a thick paste (how is this possible after adding all the water and pureeing for 45 minutes??) I decided not to toss the batch, although my husband recommended it. It was only edible after adding a lot of oil, seasoning salt and I actually added milk. This got good reviews, but I am not sure why!!!!

Low Sugar Oatmeal Raisin Cookie

Reviewed: Jan. 30, 2010
I made these twice in two days to make sure these were really that good - and they are! I used whole wheat pastry flour since it adds more fluffiness. I also used part splenda brown sugar and part regular brown sugar - did not add the packets and this was sufficiently sweet. I used low fat margarine but next time i will try half marg and half applesauce. i also used mini-choc chips instead of raisins. will make again and again!

Easiest Eggplant

Reviewed: Jan. 16, 2010
I was expecting so much more! I also drizzled with bals vinegar, added parm cheese, then even baked with sauce and cheese after it was complete. I really wanted this recipe to be good, but it was very "eggplanty."

New Mom Broccoli Kugel

Reviewed: Jan. 13, 2010
I think the recipe as-is would only be a 3 1/2 stars. I rated this with 5 stars with my changes because the recipe was so easy and used a minimal amount of ingredients. I couldn't imagine cooking eggs/quiche without cheese, so I added about 3/4 cup feta cheese, 1/2 cup parm cheese and garlic powder. also decreased to 1/2 onion since I was making more of a breakfast quiche. I also used 2 - 10 oz packages of chopped broccoli. SO Easy and the ingredients readily available in the kitchen. Will definitely make again! Only cooked for @60 minutes until golden brown.

Laura's Quick Slow Cooker Turkey Chili

Reviewed: Jan. 9, 2010
I loosely followed the recipe and it was wonderful! 2.5 lbs lean ground turkey, browned w/ one onion, four celery stalks, and one package of chili mixture. I then put in the crockpot (4+ hours) w/ two 28 oz cans of stewed tomatoes, 2 8 oz cans of tomato sauce, 1 can tom paste, and extra chili powder, cayenne and cumin to taste. BIG FACTOR in the taste is adding the entire can of kidney beans. i also added one can of black beans. Will definitely make again and again....

Jay's Signature Pizza Crust

Reviewed: Jan. 3, 2010
I was so shocked this actually turned out okay. I halved the recipe since we like thin crust. Forgot the oil until after I stirred. Used wheat flour. I only let it rise 45 minutes. I have the pizza stone so I just put in the oven with the toppings then cooked. I also added garlic powder and rosemary to the dough.

Sesame Parmesan Zucchini

Reviewed: Jan. 1, 2010
I thought this had great potential. I used 6-7 smaller zucchini squash so I was not sure if this equalled 1 medium zucchini. The rest of the ingredients/measurements I followed almost exactly, but I only added @1 Tbsp olive oil and I used lots of sesame seeds. Next time will omit entirely and use only sesame oil. I cooked for @15 minutes then broiled until golden brown. Was surprised how well the flavors blended. Will definitely make again!!!!!

Popovers

Reviewed: Dec. 25, 2009
SO easy. Followed directions. added vanilla and cinnamon to one batch. for the other batch added poultry seasoning. the only negative is that these can not be made ahead. They MUST be fresh. I think they would be great with cheese and garlic powder, but afraid they would not turn out.

Savory Onion Bread

Reviewed: Dec. 25, 2009
I gave this 5 stars because it was SOOO easy and had lots of flavor. Next time will add even more garlic powder - I simply sprinkled some on top last minute. Kinda reminded me of Red Lobster biscuits.

Easy Broccoli Quiche

Reviewed: Dec. 13, 2009
Used some of the recommendations of others. baked 1/2 cup of cheddar cheese on the the crust for about 10 minutes to set. Used frozen broccoli (gasp!!) and turned out great! I thawed completely and dried w/ a paper towel. i sauteed w/ green onions and diced yellow peppers. Was very good! I will consider adding feta cheese or possibly turkey sausage.

I doubled this for 9 women for book club and it made just enough. Followed the recipe, decreased the spices in about half, but added more basil. Such a good soup!! Will definitely make this soup again!!

Walnut Chicken Spread

Reviewed: Sep. 14, 2009
This was tasty, but a little different than expected. We had this on croissants, and I think it would have been much better on crackers. I am ranking this a four because I think I did not serve it properly. Would not make as a sandwich.
