Easiest Eggplant

Reviewed: Jan. 16, 2010
I was expecting so much more! I also drizzled with bals vinegar, added parm cheese, then even baked with sauce and cheese after it was complete. I really wanted this recipe to be good, but it was very "eggplanty."

New Mom Broccoli Kugel

Reviewed: Jan. 13, 2010
I think the recipe as-is would only be a 3 1/2 stars. I rated this with 5 stars with my changes because the recipe was so easy and used a minimal amount of ingredients. I couldn't imagine cooking eggs/quiche without cheese, so I added about 3/4 cup feta cheese, 1/2 cup parm cheese and garlic powder. also decreased to 1/2 onion since I was making more of a breakfast quiche. I also used 2 - 10 oz packages of chopped broccoli. SO Easy and the ingredients readily available in the kitchen. Will definitely make again! Only cooked for @60 minutes until golden brown.

Laura's Quick Slow Cooker Turkey Chili

Reviewed: Jan. 9, 2010
I loosely followed the recipe and it was wonderful! 2.5 lbs lean ground turkey, browned w/ one onion, four celery stalks, and one package of chili mixture. I then put in the crockpot (4+ hours) w/ two 28 oz cans of stewed tomatoes, 2 8 oz cans of tomato sauce, 1 can tom paste, and extra chili powder, cayenne and cumin to taste. BIG FACTOR in the taste is adding the entire can of kidney beans. i also added one can of black beans. Will definitely make again and again....

Jay's Signature Pizza Crust

Reviewed: Jan. 3, 2010
I was so shocked this actually turned out okay. I halved the recipe since we like thin crust. Forgot the oil until after I stirred. Used wheat flour. I only let it rise 45 minutes. I have the pizza stone so I just put in the oven with the toppings then cooked. I also added garlic powder and rosemary to the dough.

Sesame Parmesan Zucchini

Reviewed: Jan. 1, 2010
I thought this had great potential. I used 6-7 smaller zucchini squash so I was not sure if this equalled 1 medium zucchini. The rest of the ingredients/measurements I followed almost exactly, but I only added @1 Tbsp olive oil and I used lots of sesame seeds. Next time will omit entirely and use only sesame oil. I cooked for @15 minutes then broiled until golden brown. Was surprised how well the flavors blended. Will definitely make again!!!!!

Popovers

Reviewed: Dec. 25, 2009
SO easy. Followed directions. added vanilla and cinnamon to one batch. for the other batch added poultry seasoning. the only negative is that these can not be made ahead. They MUST be fresh. I think they would be great with cheese and garlic powder, but afraid they would not turn out.

Savory Onion Bread

Reviewed: Dec. 25, 2009
I gave this 5 stars because it was SOOO easy and had lots of flavor. Next time will add even more garlic powder - I simply sprinkled some on top last minute. Kinda reminded me of Red Lobster biscuits.

Easy Broccoli Quiche

Reviewed: Dec. 13, 2009
Used some of the recommendations of others. baked 1/2 cup of cheddar cheese on the the crust for about 10 minutes to set. Used frozen broccoli (gasp!!) and turned out great! I thawed completely and dried w/ a paper towel. i sauteed w/ green onions and diced yellow peppers. Was very good! I will consider adding feta cheese or possibly turkey sausage.

Walnut Chicken Spread

Reviewed: Sep. 14, 2009
This was tasty, but a little different than expected. We had this on croissants, and I think it would have been much better on crackers. I am ranking this a four because I think I did not serve it properly. Would not make as a sandwich.

Cottage Cheese Pancakes

Reviewed: Aug. 20, 2009
LOVE these pancakes! I will never make regular pancakes again. I used 1/4 cup whole wheat flour (may increase a little), added vanilla and cinnamon. As a topping I used thawed frozen strawberries with the use as syrup for my picky 2 yer old. She loved these, as we did also. I also will try adding parm cheese and garlic to make as a side dish for a meal. EXCELLENT!

Definitely not a five star, but this was very healthy and super simple! I used canned french cut green beans (no salt added), and I also added mushrooms. I used tons of seasoning garlic powder, garlic cloves and basil.

Dorsey's Fish & Oyster House Crab Cakes

Reviewed: Aug. 5, 2009
These were very good! Used a sweet chili Thai sauce and they were great! I agree they could use more flavor, but the sauce did the trick. I like that there was very little breading so you could really taste the crabmeat.
