Curried Quinoa Salad with Mango

I love this recipe! I use low sodium chicken boullion (sp?), and last time I just dumped in the powder after cooking in water. Even my kids love this recipe - super healthy and super easy! Hint - I use frozen mangos, which makes the recipe easier and cheaper.

Carmel's Crunchy Pea Salad

A hit at the cookout. used @3oz packaged bacon bits, two green onions, sour cream w/ @2 tbsp mayo (low cal), sprinkled @3 Tbsp ranch dressing and 1 cup celery. will add more celery and some hard boiled eggs. Great! *have made this numerous times now. I am now subbing Greek Yogurt for the sour cream. also adding tons of celery and cabbage. no cashews. also fresh dill and basil. TASTY!

Feta Shrimp Pasta

Five stars with a lot of revisions. Added chopped zucchini to the shrimp saute. Used Italian dressing instead of butter for added flavor. Used green onion instead of white. Squeezed half a lemon into the mixture. Also added about 1/2 cup to 1 cup of milk for extra creaminess. also added old bay seasoning to the shrimp. OH - used bowtied pasta. I was told that I MUST make this meal tomorrow. WONDERFUL AND QUICK TO MAKE!!!!!! Added note: I have been making this for several months now. Have subbed chicken, added sauteed frozen veggies, and have yet to complain about the meal.

Double Almond Chocolate Chip Cookies (Gluten-free)

Love the cookies! I subbed 1/2 the oil with applesauce. Glad I did not add the sliced almonds since these were very tasty with the omission. Cooking time was @20 minutes. Just sweet enough!**update - left out the choc chips and added cinnamon. delicious!

Sister Schubert's® Sloppy Joes

LOVE this recipe. I used 2 lbs beef and added a little extra onion and peppers (I also added celery). there was plenty of sauce to spare, so next time I will load it up even more with veggies. very tasty! One tip to make this recipe more lean is to rinse the beef off with water in a colander (after browning).

Zucchini Spread

I changed this recipe a bit. Toasted almond slivers instead of walnuts. Tasted bland so added fresh dill. Very refreshing taste. served with veggies and crackers. Will make again.

Pumpkin Chocolate Chip Cookies III

I have to confess that I am not too thrilled with these cookies. However, my kids love them, and the playgroup gang loved them as well. This definitely is a healthier way to satisfy the sweet tooth. I used 1 smaller can of pumpkin and doubled all ingredients. I only used 1 1/2 cups suger. I also used 1/4 cup veg oil and subbed no sugar applesauce for the remainder oil. Also used whole wheat pastry flour and omitted the baking soda. These cookies did not spread, possibly b/c of the pastry flour. Will make again!

Roasted Garlic Cauliflower

YUM! Side dish with Artichoke Chicken. The only thing I did different was cover with alum foil for the first 10-15 minutes. I then stirred and broiled on high. Think with my oven temp I could've gone without covering first since they were a tad bit mushy. Still great and I will make again!

True Maryland Crab Cakes

Cheesecake Brownies

Made as last minute potluck. First dessert to go. SO easy. SO good. I followed directions for cake-like brownies and based in a 9x9 pan. Not sure how long I baked them. Will definitely make again. OH - also added vanilla extract to the cheesecake.

Spinach Lentil Soup

Didn't not stray too much from original recipe. Had more flavor than anticipated. Added garlic powder, frozen spinach and used brown rice. Next time I will at least double the carrots. May also add celery. Good!

Apple Squares

This is now the third time I am making this recipe, so obviously thought it was great. I modified this significantly to make it more healthy. This is my current batch modification (I doubled the recipe): 1/2 cup whole wheat flour (yes, even when I doubled the recipe) 1 cup oats, 1/4 cup wheat germ, only 1/2 cup packed brown sugar and I omitted the white sugar, used 1/4 cup light butter and also added 1/4 cup natural applesauce. I do not feel the recipe was compromised by omitting the white sugar. Next time I make this I will consider sneaking shredded carrots... Assuming this batch will turn out just as delicious as the others.

No Sugar Added Cookies

It does not matter these cookies do not expand, or they are brown in color (that is normal for bananas!). These cookies ROCK! I made them four times in one week and they were just as awesome each time. I did end up decreasing the amount of butter but at least 25 percent and it did not compromise the recipe.

Room 157 Sugar Cookies

WOW! Why did this get bad reviews?!?! This is my go-to recipe from now on!!!!! FYI - the dough looks very oily, but do not worry!! I have been looking for a good no-butter cookie recipe and this is IT! Slightly crispy, a little fluffy. I actually made a batch with reg flour and a batch with whole wheat. Both are terrific!
