About this Cook
Born in CA but raised in the Midwest. I am one of those crazy people that truly love eating healthy. I am a runner and want-to-be triathlete, so when I eat carbs, they better be full of nutrients (unless they are brownies or sweets!). I also must add that whatever I make must go well with red wine. Okay, I will also add that I have two kids so my time is limited. The meals I prepare are typically fast, but not necessarily kid-friendly.
My favorite things to cook
I enjoy modifying recipes to make them healthy. Adding loads of broccoli, cabbage, cauliflower, etc. My new passion are eggs recipes(free-range of course) since they are more humane than standard meat. Yes, I am one of THEM as well. Although I must say, if you look at me I do not fit the part since I look more like a yuppy.
My favorite family cooking traditions
Since my mother is a horrific cook, I am starting the traditions. I take that back, my grandma can make the most amazing mashed potatoes - check out Make-Ahead Mashed because they are very similar. OH, you will love them. So, unless I choose to recreate Shake-N-Bake pork chop WELL DONE, I am on my own here.
My cooking triumphs
Just getting in the kitchen is a triumph! Training takes up a lot of time, so cooking was not a priority until I got sick of canned tuna and steamed veggies.
My cooking tragedies
My tragedy still sickens me. I purchased two beautiful filets from THE West Point Market (for those sheltered people who are clueless, it is the premier market know throughout the Midwest, and rumor has it further). So I purchased these filets and they were sitting on the counter just waiting to be cooked and finished off with a red wine and balsamic reduction with mushrooms - when my dog ate the filets. I swear my 90 pound Rottweiller had never jumped on the counter before when I made the mistake of turning my back for 30 seconds. I was so devastated that I could not even yell, all I could do was laugh. The funny thing, I do not think she even chewed the 3/4 pounds of meat she ate. Two huge gulps. Some would say it was priceless, but it definitely was not.

Tina's Shortbread Chocolate Chip Cookies
Family loves these cookies! Light, buttery, flaky. Used whole wheat flour, omitted walnuts, used salted butter, added vanilla extract. Could easily add other ingredients

Paleo Banana Bread
I have been making this for a year. Very moist and tasty. I use honey and applesauce instead of agave. I now use mini loaf pans and/or muffin pans. My kids love it!!
