Black Beans and Rice

Very good, I would cut the cayenne pepper in half and/or possibly use freesh peppers instead. Also, we added a can of corn and wrapped it in a flour tortilla.

Holiday Cranberry Chutney

Yummy, best cranberry side dish for turkey I've ever made! The apple helps to cut the intensity of cranberries just enough to make them even more appetizing.

Baked Sweet Potatoes with Ginger and Honey

Waaay too spicy, and I like spicy in general. Will find a milder recipe that doesn't cover the taste of the sweet potatoes so much.

Cinnamon-Peach Cottage Cheese Pancakes

These were terrific! I substituted nonfat cottage cheese, used one egg plus six egg whites (the kitties like the egg yolks,) nonfat milk, skipped the butter, and had only canned peaches, which I chopped up and used. These were eaten all the same day!

Peach Cobbler Dump Cake I

Although I carefully grated cold butter all over the surface, there were still a LOT of dry, powdery pockets of plain cake mix. The concentrated cake/butter mix on top tasted too salty/powdery, and ruined the home-canned peaches beneath.

Asian Salmon

Made a side of salmon taste like hot dogs. We didn't like it at all. In the future, I won't waste perfectly good salmon by covering it with so much stuff that it tastes like something else.

Perfect Rhubarb Pie

When it turns out right, it's perfect. I usually need to add more sugar and thickener to the pie, though. The amount of extra sugar varies with the quality of rhubarb, so it's one of the harder recipes to get right.

Teriyaki Sauce and Marinade

Very strong flavor, so you don't need to use a lot. I thickened it with 1 tbl. cornstarch and 3 tbl. water. My family loved it!

Cucumber Sunomono

This is really more like a pickled side dish, but unfortunately, I tried to use it as the main vegetable. Not a good idea, unless you want a stomachache from all the vinegar, :(
