Spinach Lasagna II

I made this exactly as the recipe states and it was delicious! So easy to make! I used "oven ready" lasagna, just to ease my mind. Next time I think I will use a jar sauce only because I can choose different flavors. It looked very impressive coming out of the oven. I great vegetarian option.

Brown Rice and Black Bean Casserole

WE LOVE THIS! The only change I made was doubling the rice (and vegetable broth). I like to follow the recipes to a tee (almost) and then adjust from there. I will make this again and will add an extra zucchini and more mushrooms, just because we love them. Thanks for a great healthy recipe!

Quick Quiche

This was delicious and easy! I added 1/2 cup canned diced tomatoes and about a cup of sauteed mushrooms. Cut the amount of cheese because it seemed like too much. Did not use melted butter because I didn't want the extra fat. I don't like pie crust much so this was perfect. Thanks!

Tasty Collard Greens

This is the first time I have ever cooked collard greens...was always to "afraid" that they wouldn't measure up to my friend's. This was so easy and the results were delicious! I could not find smoked turkey drumstick, so I used a smoked turkey wing, which seemed fine. The only other change I made was that I added a small chopped onion when I added the greens to the pot. Instead of salt and black pepper, I used Season All, which I layered throughout as I added the greens to the pot and let them cook down.

Fiesta Pinwheels

These were so good and EASY. I used some diced jarred jalapenos instead of green chilies and omitted the olives because a friend doesn't like them. Used salsa instead of picante (what I had). Very tasty!

Slow Cooker Chicken and Dumplings

This was delicious. I pretty much followed the recipe. I put a soup can full of water in and that was the perfect amount. I only used one package of refrigerated biscuit dough because there are only two of us. If you use two, you made need more water. I added a can of peas and a can of corn just because that's all I had and we need some veggies.

Asian Coleslaw Light

I have made this twice in two days. Once for a party we went to and once for us because it was so good! I made it exactly as stated in the recipe for the party. The whole bowl disappeared quickly. I made it for us using Balsamic vinegar instead of cider. Had to sample before dinner....delicious. The only thing I didn't do either time is boil the water for the ramen noodles. Yesterday, after it chilled for a few hours, the crunch was gone. However, we liked the crunch of them, so I am not allowing that long to chill. A very tasty, lighter slaw. Thanks!

Slow Cooker Pot Roast

THE BEST slow cooker roast we have ever had. I thought it sounded like a strange combination but it was delicious. I have always had a problem making a tasty gravy but this was perfect. I made exactly as directed but added cubed potatoes. Definitely a do-over.

Best slow cooker recipe we have made...and we have made a lot! Delicious. We used chardonnay instead of chablis only because it's what we had. That's the only change. Thanks for a very tasty, gourmet tasting meal!

Plum-Glazed Cornish Game Hens

We really enjoyed this! SO EASY and very few ingredients. Couldn't find plum jam so used red raspberry. Really delicious. I may use more crushed red pepper the next time, we like the zing. The only thing I did different was salt and pepper the hens before putting them in the slow cooker. This is a keeper!

Pepperoncini Beef

This was FANTASTIC! I made it just as the recipe says. Thought it may be to much heat but we loved it. I put it on crusty rolls, sprinkled with mozzarella and popped them in the oven to melt the cheese. YUMMY!

Mushroom Lentil Barley Stew

I made this as is except I couldn't find dried shitake mushrooms, so I used dried porcini. It was delicious. I agree that the pepper is a little overwhelming but we like spicy, so still enjoyed it. I would cut the pepper in half next time. Definitely a do-over!

Made this as is and very easy! Delicious but a little too salty. Would make again but probably use low sodium chicken broth instead of the bouillon. Was awesome to come home and smell this cooking!

Slow Cooker Beef Stew

We made this again and used fresh jalapenos and added some garlic powder and Italian seasoning. We love this recipe! -------------------------------------- This was very good but needed a little more salt (I like salt!). We used jarred sliced jalapeno, because it is what we had and also V8 in place of tomato juice for the same reason. Very tasty and nice on a crisp day.
