Apple Squares

My husband and his hunting partners have thoroughly enjoyed this treat. As with many other reviewers, I doubled the recipe and baked them in a 9X13 pan. I used 1.5 cups sugar total in the double recipe and 2 cups apple total. These are a great cross between a bar and a coffee cake.

Glazed Apple Cookies

Yum! My husband just exclaimed "I love fall!" I used apples from my parents' tree in these yummy cookies. I followed the recipe as written and they turned out thin and chewy. Just perfect. I did bake them at 375 instead of 400 for 10 minutes. As another reviewer suggested, I added some cinnamon to the glaze and then just drizzled it over the cookies. These will become a fall tradition.

Simple Coleslaw

Almond Wild Rice

I had high hopes based on the other reviews. I think the recipe is a good base, however we found it lacking in flavor, even with the broth, parsley, etc. I had to add salt three times and we are generally a low salt family.

Tomato, Cucumber and Red Onion Salad with Mint

Loved it! Our garden has produced an abundance of cucumbers, so I've used at least 3 different salads from this site. I really like the mint flavor with the red wine vinegar. I only used about 1 Tbsp of olive oil and I always substitute green onions for red onions since my husband doesn't like red ones.

Zucchini Cobbler

I totally fooled my husband. He was sure he was eating apple cobbler. This cobbler is both simple and tasty with just the cinnamon and nutmeg flavoring. Peel, seed and chop the zucchini rather small and you'll have a great new use for those garden extras.

Cheesy Tuna Mornay

I appreciated how similar this was to a classic tuna casserole, but without using canned cream soups. As someone mentioned previously, I topped mine with french fried onions because I had some on hand. For our taste, we needed a little bit of garlic salt sprinkled on each serving at the table.

Fresh Spaghetti Sauce

This makes a very rich, tasty sauce without much salt. I substituted part fresh oregano for the dried and used a generous amount of fresh basil in place of some of the italian seasoning. I also used half olive oil and half butter for cooking the vegetables (less than called for overall.) The recipe makes a beautiful, chunky sauce. However, I pureed mine so my picky children would eat it. Make extras to freeze!

Grilled Greek-Style Zucchini

Ham Fried Rice

Japanese-Style Cabbage Salad

Great, light salad. I substituted peanuts for the almonds as another reviewer suggested (it was what I had on hand). I found the dressing to have a nice tang to it.

Baked Teriyaki Chicken

I made only the teriyaki sauce and then used it on salmon. This was a winner! I won't ever buy sauce again. One recipe was perfect for a pound of salmon. I did half the sugar and use brown instead of white as other reviewers had suggested. In the future I'll play with using less soy sauce in an effort to lower the sodium content.

Quinoa with Veggies

This was my first attempt at quinoa. It got rave reviews at the family Easter gathering. I thought it was good, but I may need to fully develop my taste for this grain. I cooked mine in onion broth according to package directions. I included celery with the cooked vegetables and I mixed in halved grape tomatoes and green onions prior to serving. I thought it needed a little more salt than the recipe called for.

Sunday Morning Lemon Poppy Seed Pancakes

We love these! I may never make standard pancakes again. I use all lemon juice to sour my milk. When I don't have a fresh lemon on hand I skip the zest, and that works too.

Kettle Corn

Oh, we love this! It took a bit of practice to get it right, but I may never buy kettle corn at the fair again. Following others' suggestions, I pour my corn kernels in after the 3 test kernels pop. I pour the sugar on top and then stir. After that the shaking is really important.

Honey Roasted Red Potatoes

These made for a tasty side dish for kabobs on the grill. I tossed the sauce with the potatoes in a bowl and then poured them onto a baking sheet lined with foil and sprayed with oil. They cooked up perfectly in the stated time.
