Pasta e Fagioli I

This is a fantastic soup! It definitely does not serve 8 if you're serving as the main course. I added diced carrots, red pepper, green onions and used 2 cans diced tomatoes. I also substituted vegetable stock.

Margarita Cake

Very good. I also used lemon cake mix and lime juice in the cake. Next time I think I'll use lemon juice instead of lime in the glaze.

Dump Cake I

Easy Bunny Cake

I've been making this cake for years. I use white cake mix and cream cheese frosting. I also color some of the coconut pink for the ears and green for grass (I put around the cake).

Peach Berry Cobbler

Very quick and easy. I used frozen peaches from last summer and it turned out great! The topping more cake like (like my grandmother's) vs. biscuit like (like my mother's). The dish needs to be at least 8" sqaure and 2" deep - my dish was a bit shallow and a lot of the juices ran over.

Definitely use fresh garlic! If you don't like the crunch of the onion add a little oil to the onions to soften.

Pasta Pomodoro

This is a really easy recipe (and good too). I substituted vegetable stock for chicken and added a tablespoon or so of white wine. I recommed decreasing the amount of pasta to 12-14 ounces.

Tofu Turkey II

Grilled Asparagus with Orange Wasabi Dressing

I served this with Kung Pao Chicken (actually I used tofu) and it was a great combination. I didn't add all the asparagus because I wanted it a little more saucy. I also baked in the oven at 450 for about 10 minutes and it turned out great.

Kung Pao Chicken

Wow! This was very hot but so good. I substituted tofu for chicken and added carrots, brocolli and bamboo shoots. Definitely double (or triple the recipe). Exact measurements aren't required either - I added more soy sauce for a saltier taste.

Chicken Marsala Florentine

This was fantastic! The sun dried tomatoes add a great flavor. I used tomatoes packed in oil so I cut the butter almost in half and it still turned out perfect! I also added a clove of garlic and a green onion to the sauce for a little more kick.
