Black Bean and Corn Quesadillas

Very tasty! But I had a hard time flipping them without all the beans and corn falling out. Next time I will put mixture on half of the tortilla and fold - much easier to turn over.

Asian Turkey Burgers

I have made this many times and my husband and I love them. I usually just do them in a pan over medium high heat. Also, I've never added the water chestnuts because I don't usually have them. But, tonight, I have water chestnuts in the cupboard and will add them for some extra crunch!

Lentil Barley Stew

My husband and I love lentils and we've been trying to eat an over-abundance of arugula from our garden. This was the perfect combination. I didn't have barley so I used short grain brown rice, substituted chicken broth, left out the salt, and as another reviewer suggested, added 3 bay leaves, some basil and marjoram. Next time I'll add more arugula and black pepper. We loved the stew consistency. Served it with a dollop of sour cream.

Favorite Fish Chowder

We love this chowder! I cut back a little on the pepper and salt - otherwise followed the recipe. Served with toast and cole slaw. Yummy!

Baked Haddock

Everyone I serve this to loves it! I changed a couple of things. I add about 1/2 tsp salt to the bread crumbs instead of the 2 teaspoons added to the milk. And I only use about 1/2 cup of milk. Wonderful!!

Chicken and Veggie Hand Pies

Delicious! My husband thought it needed a sauce over it so he heated up some cream of chicken soup. I thought it was fine. I did use more cream cheese than it called for. I'm thinking of trying it with left-over Thanksgiving turkey!

Balsamic Brown Rice Salad

Delicious! I wasn't crazy about adding the Splenda so after reading other reviews, I went with the liquid Stevia and some honey. Instead of plain cranberries, I had a bag of mixed cranberries and raisins and I probably doubled the amount called for in the recipe. Also added some chopped pecans! Wonderful!! This one is a keeper.
