Amazing Slow Cooker Chocolate Cake
This worked out perfectly. I reduced the sugar by a bit, but not much. I also replaced the vanilla extract with real ground vanilla. Other than that, I went exactly with the recipe, also for the cooking time. It was delicious with simple vanilla or stracciatella ice cream. It’s good warm, but also cooled down after a day or two. I made it in a large (6 quart?) slow cooker. Don’t use a small one, or chances are the cake won’t cook properly. It was still gooey in the centre, but not really undercooked, just deliciously soft and creamy – and only when served still warm. I will definitely be making this again, it’s very easy.

Finnish Meatballs (Lihapyorykoita)
These are easy to make, I had all the ingredients in the house, and they were amazing. Pretty much exactly like Swedish köttbullar. I added potatoes, and forgot the veggies, but that was okay. :D Everyone loved them and they were gone in no time! I made them start to finish in a classic cast iron skillet. Little mess and little cleanup. I will definitely be making these again.

Great Easy Waffles
These waffles are super easy to make. I accidentally broke the yolk of the first egg, so I threw the whole egg in with the other two yolks, thus ended up with three eggs in he mix, and I also substituted half of the AP flour with whole spelt flour. I use ground vanilla beans instead of the extract, so I mixed that in with the dry ingredients first, and since I had no whole lemons, I used some lemon juice instead of the zest. So yes I made a bunch of changes, but the waffles came out amazingly fluffy yet crisp, and I’m sure they would have been much like that if I hadn’t made those changes, because the extra egg probably made up for the whole spelt flour.
