Spicy Black Bean Cakes

These were absolutely amazing. We like spice, but I felt 2 jalepenos were fine - and I was happy I made that choice. Didn't have a problem with the uncooked sweet potato. This got my take-out happy fiance to eat and enjoy something healthy - this will become a week night staple.

Firecracker Fried Chicken Drumsticks

these are always welcome at super bowl parties! I use Franks Red Hot wing sauce, worcestershire and cayenne and leave the skin on to soak for at least 24 hours. I add more cayenne to the batter as a lot of the sauce burns off in the oil. Make sure the oil is HOT. Awesome for chicken fingers too.

Lemon and Cilantro Shrimp

I like this recipe - it's very light and actually easy to make. 6 lemons for zesting is unnecessary! I buy 2 large ones and that works perfect for zest and juice.

Blackened Tuna Steaks with Mango Salsa

So very good! I was too lazy to do the salsa myself and not a huge fan of mango, so a little pico de gallo and pineapple to the rescue. Good thing too - we needed that sweetness to cut down on the spicy from the tuna. Warning: you will breath in cayan fumes!

Seafood Piccata

My first attempt at piccata minus the can! I like it - I added veggie broth to cut some of the wine taste, added capers and cut out some of the butter. To save on cash I use a Trader Joes bag o' frozen seafood - shrimp, bay scallops and calamari. YUMM!

Terrific Turkey Chili

My go to chili! I prefer a lighter chili with lots of veggies and this is perfect. I took others advice and browned the pepper and onion in the pan with the meat to cut down on time. I also use veggie stock and a little chicken bouillon. I add a dash of this and a dash of that to taste - but a great starter.

Yummy Lemon Salmon Burgers

Really good! Other recipes I've tried were too "fishy!" I cooked them in my Foreman Grill so as not to heat up the house on a hot summer day. I added hot sauce to the sauce to give it some kick. Another note - first time I used canned salmon - the bones scared me at first, I took out the big chunks and once everything was mixed together they disappeared.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

These were amazing...and a smash hit at various Easter weekend functions. I'm not a huge fan of raisins - and was glad to find this recipe didn't ask for them. The pineapple was a pleasant surprise and kept the cupcakes moist. I doubled the recipe and ended up with 30 or so cupcakes and drained the pineapple.

Cream Cheese Penguins

these little guys were so cute! made them with the blue cheese ball in the shape of an igloo for a holiday party and everyone RAVED about them. A little messy to make - I recommend a piping bag...I didn't have one and used a simple sandwich bag which worked fine.

Sheila's Perfect Sangria

BOMB! and pricey! Made this for a bachelorette beach party and it got rave reviews. Cointreau is $30 a bottle - I bought a 1/2 pint of Grand Marnier for $11 and used half of it - may try orange liquore next time. Also this is a TON of fruit - use less fruit and I don't think you'd be disappointed. I cut the sugar in half and added some rum at the end - soda just makes it a little carbinated. YUMMM!

Spinach and Feta Turkey Burgers

These. things. are. BOMB! Even feta hating boyfriend loved them*. 4 stars because I changed just a tad - chopped basil and jalepeno in food processor and mixed in with the rest. Added a little worcestershire sauce. Also found them to be a little wet - so I added bread crumbs. Letting them sit in the fridge for a few hours def. helped. These will be a summer time staple! (*I lied about the feta - what he doesn't know won't kill him!)

Bacon Asparagus Pizza

LOVE. anything. with. chevre! Did pretty much everything as is. My SO hates tomatoes so I only put them on half and cut the amount of chevre in half. Mixed some parmasan in with the mozzarella and chopped up a jalepeno* with the asparagus for more of a kick. I was hesitant about not using sauce - but I listened to a few of the other posts - and loved it without. Thank you! (*highly recommended)

Gloomy Day Smoothie

This was good - the reason for 3 stars is because for me the banana and OJ overwhelmed the mango flavor I was hoping for. I used frozen mango, frozen banana and plain yogurt. Next time I will use fresh mango and an orange instead of OJ!

Chicken Avocado Pizza

Just got a new pizza stone for Christmas and have been trying all sorts of new concoctions - loved this one! I spiced up the avocado with a little more cilantro and lime and added onion - plus did not use the chicken. I was so excited to try it I burned my mouth!

Fire-Roasted Tomato and Spinach Pasta

I love this recipe. So simple - and I ALWAYS have these things in my pantry! As others I added more garlic and chopped onion. But I also prefer the jalapeno or zesty chilie tomatoes so I subbed that and it gave it a nice punch, plus chopped some black olives and used bowtie pasta. Next time I'm going to add some shrimp!
