Cool Whipped Frosting

Reviewed: Feb. 9, 2012
I hate making frosting, I don't like separating eggs or cooking it and waiting for it to cool, so I love how easy this recipe is. It is very fluffy and creamy and delicious! I make it all the time using different pudding flavors or extracts depending on what I need it for. I start out with 1/2 cup milk and then increase it if needed to prevent runny frosting. The recipe works best when using brand name Cool Whip and Jell-O Pudding. I've used off brands a couple times and it comes out runny and grainy.

Quick and Easy Pizza Crust

Reviewed: Jun. 21, 2012
This is an awesome pizza crust recipe. I make it even faster by using rapid rise yeast so I can skip the proofing step. Just mix everything in a bowl and let it sit for 5 or 10 minutes and it's ready!

Carrot Salad

Reviewed: Nov. 8, 2012
This was a great refreshing and healthy recipe. The apple really complement the carrots and the honey just brings it all together. I just tossed everything in the food processor, except the almonds, and pulsed a few times. I didn't blanch the almonds. I refrigerated it for a couple hours before serving and the almonds were soft by the time we ate it. I don't like raisins, but other people I served it to thought they would be a good addition. I'm planning on making this again for Thanksgiving to balance out the heavier dishes.

Blueberry Flax Pancakes

Reviewed: Mar. 5, 2013
These are really, really good! I didn't think that something with flax seeds would be light and fluffy, but they are! I use 1 cup of a frozen berry medley from Costco. I don't bother to thaw them and they still come out fine. I use a whole wheat pancake mix found on a blog called Kitchen Treaty. These pancakes have become a weekend tradition. Now the only thing I need is a healthy syrup...

Strawberry Swirl Cake

Reviewed: Jan. 14, 2012
This is my favorite cake recipe ever. I make it all the time. I use different jello and fruit combo's to change it up. The cake turns out light, fluffy and delicious every time!

Easy Iced Coffee

Reviewed: May 28, 2014
This is a very simple drink, but I appreciate the recipe because I struggle to get the ratios of milk, ice and water right. I also think shaking it up helped. I use Mt Hagen freeze dried coffee. I only needed 1 tsp of it and a scant 1/2 tsp of sugar.

Tortillas I

Reviewed: Jul. 31, 2011
This was my second time making tortillas. They were a little hard to roll out in the beginning, but they are very easy once you get the hang of it. I never want to get store bought ones again!

Chicken Pot Pie II

Reviewed: Apr. 18, 2013
This was great and pretty fast because I used leftover rotisserie chicken. I just added my own chicken broth since I didn't cook any chicken. I added a bottom crust. It was a mistake. It wasn't soggy, but it wasn't crisp and flaky either. I made my own crust (it's easy!) and used whole wheat flour for half the white flour. It gave the crust substance and flavor. It was great for dinner, but I wouldn't do it in a dessert pie. Next time I make these, I'm going to make them in ramikins so it's easier to serve. Overall, the flavor was great and I will make them again. This is healthier and more delicious than any frozen pie you can buy.

Colorful Frittata

Reviewed: Jul. 31, 2011
It tasted great and always bakes up really nicely. It's easy to change it up and use whatever veggies you have on hand and is quick to throw together after a busy day.

Traditional Stuffed Peppers

These were so good! Perfect for two. The only thing I changed was adding cheese to the top the last 10 minutes of baking. Great recipe!

Chunky Cheesecake Brownies

Reviewed: Sep. 16, 2011
I used a box brownie mix and left out the chocolate chips because I forgot to buy some. I baked in an 8x8 glass pan and they took about 35 or 40 minutes. I tried to eat one warm because I couldn't wait for them to cool, bad idea. It was a weird texture and it didn't stay together. I ate another one after they cooled and it was amazing! The cheesecake wasn't very strong, but i could definitely taste it. I took the advice of another review and stored it in the fridge. Then next day they went from amazing to heavenly!! They had a better flavor, I could taste the cheesecake more and they had the perfect brownie consistency. This would be there perfect dessert to make the day before and put in the fridge till you need them the next day. These are one of the best brownies I've ever had, you won't be disappointed. And the box mix worked great if you are feeling lazy like I was.

Banana Cream Pie I

Reviewed: Nov. 24, 2012
This was a great recipe. Tastes way better than a box of pudding mix. I followed the recipe using corn starch and making sure it was as thick as pudding before pouring it into the pie shell. I took the advice of others and didn't bake it. It turned out great! I only chopped 2 bananas for the bottom and used 1 to garnish and there were more than enough.

Perfect Sesame Chicken

Reviewed: Jul. 31, 2011
I just use the recipe for the sauce and it is amazing! I use half of the corn starch because I used the full amount the first time and it was like jello when it cooled.

Beef and Vegetable Stew

Reviewed: Feb. 11, 2013
This recipe was great. I used it to clean out the pantry. I used a random can of beef chunks instead of fresh meat and a can of green beans instead of mushrooms. I also used dried herbs. I was worried that this would just taste like veggies in tomato sauce, but with proper seasoning it turned out delicious.

Veronica's Apple Pancakes

Reviewed: Jun. 16, 2012
These were pretty okay. I added a lot of extra cinnamon and they had a great flavor, but the texture wasn't that great. They turned out wet and dense and not light and fluffy like regular pancakes. I would probably use a regular pancake recipe and add apples and cinnamon to it if I make them again

Asian Ginger Dressing

Reviewed: Feb. 13, 2012
I made this recipe as written. Good thing I tested it before I put it on salad...it was not good. I forgot that I was going to take reviewer's advice and use half sesame oil. I added some along with some crushed red pepper, microwaved it again and shook it. After that, it was so good! It really needs that sesame flavor in there. Otherwise it just tastes like oil and soy sauce.

Apple Oatmeal Cookies II

Reviewed: Sep. 11, 2011
When made as written, these cookies don't have a lot of flavor. I added extra cinnamon and some nutmeg to the second batch and it didn't help much. They are soft and pretty much like eating a bowl of oatmeal you can hold in your hand. I really like the healthy idea of recipe, especially where some reviewers suggested using applesauce instead of margarine, so I am planning playing around with it to see if I can add some flavor to these things.

Crispy Edamame

Reviewed: Aug. 10, 2013
The taste was good, but they weren't crunchy. The bits that stuck to the pan and browned were very crisp, but the rest of the bean wasn't. Maybe I'll try sauteing them in a frying pan next time.
