Molasses Banana Bread

I used 1/2 cup of fancy molasses and added 1/4 cup brown sugar. Baked for 65 minutes. It was burning on the edges and very stodgy inside. The flavour was good, though. I'll try the recipe again and make muffins instead. Hopefully that will help the texture.

Simple Garlic Shrimp

Traditional White Bread

It hardly seems worth it to add another 5-star review to this recipe, but I'm going to anyway! I've been baking all our bread for about a year now and searching for a good basic bread for sandwiches, toast, with eggs or peanut butter. This is it. I substituted 3 cups of the flour with whole wheat bread flour and added 1/4 cup gluten. Such a simple recipe, bakes up beautifully. A little chew to the crust and nice and soft inside.I'll be making this often!

Favorite Old Fashioned Gingerbread

I love gingerbread. Double the spices and this is the best. I make small loaves to give as Christmas gifts and get lots of compliments. A couple of slices with butter and a cup of coffee is heaven. Also freezes really well.

Seminary Muffins

These are great. I followed the recipe as is then added 1/2 cup of chopped dates as well and topped with a sprinkle of oats and brown sugar. The texture is lovely, light and moist. I was afraid they'd be too sweet for my taste (I made them for my husband though and he likes more sweetness)but I really liked them. You could sub in any fruit etc. and use up those over-ripe bananas, which I keep in the freezer until I'm ready to use them.

Classic Bran Muffins

These are the nicest bran muffins I've ever made. I like using fresh or frozen fruit instead of raisins, so I dredged 1 cup of frozen cranberries with a couple of teaspoons of flour and added that at the end. The texture was still perfect, not too wet as sometimes happens. Making these often.

Cheesy Quinoa Pilaf with Spinach

This had a great flavour. I sautéd a minced shallot with the garlic, used pine nuts instead of sunflower seeds and feta because I love it with the spinach and lemon. I was disappointed that it didn't have the pilaf texture I expected. Next time I think I'll use traditional pilaf technique to get a better separation of grains/seeds.

Plain Cake Doughnuts

These were delish! I used plain Greek yoghurt instead of milk and added a little more spice. Rolled them in cinnamon sugar and cannot stop eating them.

Lemon Cupcakes

These were amazing! I added a little more zest and increased the lemon juice to 1/4 cup to get more intense flavour. I also put 3/4 tsp of raspberry puree on top and swirled it in. Topped with white chocolate buttercream. Cake was light with a great balance of tart and sweet. This could be my new signature cupcake.
