Fluffy Peanut Butter Frosting

I enjoyed this recipe, although I didn't find it had a stong peanut butter flavor (which I love & prefer!) I incorporated all the ingredients together at once, along with a 1/2 teaspoon vanilla and it worked out beautifully for me. It yields a lovely piping consistency!

Tres Leches (Milk Cake)

Made this over Easter. This cake is OH-MY-GOODNESS-GET-AWAY-FROM-IT-SO-CAN-HAVE-IT-ALL-FOR-MYSELF! I will make it again and again and again!

White Chocolate and Cranberry Cookies

These were very good! I too substituted the brandy for vanilla. (I think they would be more suited with brandy over the Christmas holiday!) I also omitted the ½ cup white sugar and added a full cup of brown sugar. This step helps the cookies stay chewier longer. Minor tweaks, but still a pretty nice cookie!

Cheesecake Cookie Cups

Super Yummy - a definite keeper! I recommend adding a teaspoon of lemon juice to the batter before baking if you are concerned this treat will be overly sweet.

St. Patrick's Day Zucchini-Oatmeal Cookies

These are super tasty! Zucchini bread meets chocolate chip cookies! I tweaked them to my liking and I was incredibly impressed. I used brown sugar instead of white, added 1/2 teaspoon salt, 1/4 teaspoon nutmeg, 2 cups oatmeal - omitted the granola, and used 1.5 cups chocolate chips. Will make these again for sure!

Jalapeno Popper Spread

I will never buy poppers again! This dip is UNBELIEVABLE! The first time I made this recipe, I did so exactly as specified. It was REALLY good, but I tweaked it the next time using other posters advice and and it was perfect! I used fresh jalapeno peppers (enough to make just over a cup once chopped) omitted the green chilis (only because my grocer didn't have them in stock), used 3/4 cup of mayo and 1/4 cup sour cream, added the parmesan cheese to the cream cheese/mayo mixture, used panko crumbs on top - I feel this is the key to making it taste JUST like poppers, and made the day before eating (I found it was that much tastier the next day as the flavors had chance to really meld together)....OH MY!! I also agree that this dip is DELICIOUS cold! Will make this again and again!

One word....YUMMY! I used whipping cream in place of the milk as I wanted a richer frosting and a more professional taste. I will be using this again for sure!!

Pumpkin Brownies

These are a nice change up from the usual brownie recipe - especially if you are looking for something different in that department....and an interesting way to use up any extra pumpkin. On the down side, I don't think I would enjoy these as much any other time of the year except for the Fall.

Southwestern Egg Rolls

Oh. My. Goodness. These are HEAVEN! These are my FAVORITE item at Chili's Restaurant and I must say, mine were much better, definitely healthier, and obviously cheaper! I took the advice of other posters and used eggroll wrappers, brushed them with canola oil, and baked them at 425 for 15 minutes. Absolutely delicious!

Best Brownies

I have been looking for a yummy brownie recipe for awhile and alas I found it! I have made these a few times now - once exactly as the recipe states, once making a single batch omitting the icing, once doubling the recipe, omitting the icing, and once doubling the recipe with the icing...whew! (Hubby loves the icing, I prefer without!) I have found that no matter which way you make them, they beat a box brownie ANYDAY! Also, note that if you double the recipe, it will yield a 'cakier' texture. Single batches are more 'fudgier'. These are a keeper!
