Toffee II

Reviewed: Dec. 27, 2011
Don't place this on a granite counter top when cooling or it will cool too fast and the chocolate won't stick.

Teriyaki and Pineapple Chicken

Reviewed: Apr. 25, 2011
Love this recipe! Have made it twice now. Healthy changes: 1. Drained and rinsed pineapple to lessen sugar content. 2. Used almond flour. 3. Added 2 cups of bok choy.

Sweet Potato Minestrone

Reviewed: Feb. 1, 2011
Loved this! So did my fiancé who doesn't like sweet potatoes. He ate two bowls. I microwaved the sweet potatoes for about 4 minutes and let them cool to make them easier to peel and cut. I also used chicken broth instead of vegetable. Next time I will cut the sweet potatoes into smaller chunks. Yum!

Spinach Chicken Parmesan

Reviewed: Aug. 16, 2010
Great dish! Loved it and so did the jaded boyfriend! Added sour cream to the milk, used roasted red peppers instead of pimentos, sauteed fresh spinach with garlic instead of frozen, added crushed fiber one original to the parm mix used to roll chicken in. Served with whole wheat pasta tossed with pesto! A keeper!

T's Sweet Potato Fries

Reviewed: Apr. 18, 2010
This is a great recipe! Who needs regular fries? These are much better. I did make a couple of changes. The potatoes were so hard to cut so I microwaved them for 2 minutes then cut them. After I cut them into fries, I microwaved ythem for one minute longer. Then I tossed them in the olive oil and Tex Mex seasoning instead of the Italian seasoning called for. Can't wait to make these again!

Balsamic Baked Tilapia

Reviewed: Mar. 24, 2010
Loved this recipe! Can't wait to make it again! Did not cook it for 30 minutes as the recipe said. Cooked it for 20 minutes. Wonder how it would do add garlic next time? I didn't think it needed it but my guy did. This is a keeper!
