Carla's Sausage Cheese Balls

I have found that if I microwave the sausage for a bit, it is easier to mix with the other ingredients. After cooling, I freeze these in a ziplock bag and microwave as many as needed for breakfast.

Authentic Chile con Queso

Death by Cheese Sandwich

A little drive in where I grew up made these and called them cheese fritters. The drive in has been gone for several years now and I was very excited to find this recipe. My first batch didn't turn out too well, however because I used a slice of American cheese and the sandwich did not have enough cheesy flavor. Also, be sure and don't soak the bread in the egg/milk mixture more than a second or two or it will be soggy.

Chicken Enchiladas III

My picky children would never eat a green chili pepper, so I pureed them in the blender and then added to my soup/cheese mixture. You could still taste the peppers, but no one knew they were there. I was afraid that this recipe would have too much liquid, so I reduced the sour cream by 1/2 and only used one can of soup. There was still plenty of liquid to cover the enchiladas.

Cinnamon Rolls II

I've made these 3 weekends in a row. Needless to say, my family loves them. After the bread machine does its thing, I divide the dough in half and make a pan of dinner rolls and make the rest into cinnamon rolls. We'll never go back to store bought again!

Shredded Beef Sandwiches

I used a roast instead of stew meat, and like some others, I added the sauce to the meat after it had cooked. A lot of juice cooks out of the meat and I was afraid it would dilute the sauce too much. The sauce was a little sweet for our liking, but we gobbled it up just the same.

Plum Good Cake

This is always a favorite at our house during the holidays. Its ok if you don't have any red food coloring, the cake will just be pink instead of deep red.

Cheesy Potato Soup II

Yummmm!!! I boiled my potatoes in chicken broth, used Velveeta cheese instead of American, and I thickened the soup with instant mashed potato flakes. Then I topped it off with bacon bits. It was wonderful!!

Santa Fe Cornmeal Pizza

I used this recipe for the crust only. I used wax paper to spread the crust so it wouldn't stick to my hands. I topped the pizza with refried beans, taco meat and colby jack cheese. My husband and loved this! It is definitely on the rotation!

Classic Waffles

The batter seemed a little thin so I added an extra 1/4 cup of flour. These waffles turned out perfect!! Moist in the center and crisp on the outside. I froze the leftover waffles and they warm up perfectly in the toaster for a quick breakfast.

Churros

This recipe was surprisingly easy. It took me 20 minutes from start to finish. I didn't have a pastry bag so I just rolled the dough in my hands. Now for the bad news: No matter how long I cooked them, they were very doughy in the middle. Also, I wasn't too impressed with the taste. Perhaps something else needed to be added to the dough before cooking.

Christmas Strawberries

As a child, I helped my mother make these strawberries every Christmas. My favorite part of Christmas was eating this special treat. We always added a clove as the stem, which was removed prior to eating. The strawberries are mushy when you first make them. They are really better the next day after they harden a little.
