Cheesy Potato Soup II

Yummmm!!! I boiled my potatoes in chicken broth, used Velveeta cheese instead of American, and I thickened the soup with instant mashed potato flakes. Then I topped it off with bacon bits. It was wonderful!!

Plum Good Cake

Velveeta® Cheesy Beef Stroganoff

This is WAY better than any boxed hamburger helper!!! I used cream of chicken soup instead of mushroom and it was FANTASTIC!! This will be one of my family's favorites from now on!!

Death by Cheese Sandwich

A little drive in where I grew up made these and called them cheese fritters. The drive in has been gone for several years now and I was very excited to find this recipe. My first batch didn't turn out too well, however because I used a slice of American cheese and the sandwich did not have enough cheesy flavor. Also, be sure and don't soak the bread in the egg/milk mixture more than a second or two or it will be soggy.

Classic Waffles

The batter seemed a little thin so I added an extra 1/4 cup of flour. These waffles turned out perfect!! Moist in the center and crisp on the outside. I froze the leftover waffles and they warm up perfectly in the toaster for a quick breakfast.

Mom's Buttermilk Biscuits

I didn't have any buttermilk on hand so I made my own by combining 4 1/2 tsp vinegar with 1 cup milk and letting it sit for 15 minutes. The biscuits rose well, but the taste was bland. Next time maybe I'll add some sugar.

Fluffy French Toast

I used french bread and I guess I let it soak too long. The middle was very soggy. Next time I'll either use thinner bread or not let it soak so long. The taste was great, however. I'll definitely try again.

London Broil I

Soy sauce was a little strong for my family's taste. Next time I'll reduce that a little and add onion salt. I might also try this marinade on a more tender cut of meat.

Churros

This recipe was surprisingly easy. It took me 20 minutes from start to finish. I didn't have a pastry bag so I just rolled the dough in my hands. Now for the bad news: No matter how long I cooked them, they were very doughy in the middle. Also, I wasn't too impressed with the taste. Perhaps something else needed to be added to the dough before cooking.

Chicken Enchiladas III

My picky children would never eat a green chili pepper, so I pureed them in the blender and then added to my soup/cheese mixture. You could still taste the peppers, but no one knew they were there. I was afraid that this recipe would have too much liquid, so I reduced the sour cream by 1/2 and only used one can of soup. There was still plenty of liquid to cover the enchiladas.

Easy Key Lime Pie I

As Simon would say, "It was just OK". The ugly yellow color was a real turn-off. Pink lemonade pie is much better.
