Three Cheese Manicotti II

This was delicious. I was short 1 cup of mozzarella so I substituted with 1 cup of cheddar for the inside cheese mixture. I also skipped the egg since I was out of them as well, added 1 tbls of fresh minced parsley to the cheese mix, and upped the sauce qty by 1 cup since I wanted a meat sauce. Used 1 lb of ground beef.

Butter Roast Chicken

This chicken was great. As another reviewer suggested, I placed halved red potatoes and baby carrots in the bottom of the pan and topped them with the chicken. The carrots really picked up the flavor and the potatoes roasted nicely.

Stuffed Pork Chops II

This was excellent with a few modifications. I browned the pork chops in a skillet and also added a bit of salt, sage, celery seed, thyme, and rosemary to the stuffing mix. I used one can of corn and had to add about 1/3 cup of chicken broth to the stuffing mix to get it to the right consistency. Also added about 2 or 3 tablespoons of chicken broth to the soup just to make it easier to pour over the chops. Very, very good. Thanks rainy918. I gave it 4 stars instead of 5 only because it really needed the herbs and chicken broth.

Coq au Vin alla Italiana

This was very good using canned italian flavored diced tomatos and adding a little extra italian seasonings to the chicken before I coated it with flour. I think without that it would not have been quite as much flavorfull. I used white wine instead of red and used a water/cornstarch mixture to thicken the sauce. Served over extra wide egg noodles...mmm!

Grilled Sausage with Potatoes and Green Beans

This turned out very, very good. I added 1 tsp of minced garlic and seasoned with oregano and a little seasoning salt as well. Used olive oil in place of the vegetable oil and cooked it in the oven as other reviewers suggested. Thanks for the recipe!

Baked Dijon Salmon

I made this and thought it was delicious. I used equal parts of mustard and honey though because I wanted it equally sweet and tangy. I also did not use the pecans because I am allergic to nuts.

Four Cheese Macaroni

I made this last night and it turned out excellent. I like the fact that you don't have to do the milk/flour thing for this recipe. I doubled the amounts of the cheeses and did not use the processed cheese food because of my personal taste preference.

Hard Taco Shells

This was my first time trying these this way and it was very good!! I'll do it this way from now on. I tried it with the corn tortillas as well as the flour tortillas. I prefer the corn. The flour tortillas taste similar to the taco bell "chalupa" shells.

Best Steak Marinade in Existence

Greek-Style Rib Eye Steaks

Tip - Don't add too much salt to the meat since the feta cheese is salty. This is delicious and was my introduction to feta cheese, which I now love. The seasonings mesh so very well together with the cheese, black olives, and lemon juice.
