Cut-Out Cookies Made with Oat Flour

Awesome cookies. The use of oat flour and confectioners sugar makes this dough incredibly easy to work with-even my five year old had no problems. The cookies were soft and flavorful; very yummy! I added some lemon extract to one batch with excellent results.

Whole Wheat Pumpkin-Applesauce Muffins

Delicious!! They're moist and fluffy, but hearty too. I made one batch with the recipe as is and another substituting pumpkin butter for applesauce and puréed sweet potato for the pumpkin and added toasted pumpkin seeds. This is a great recipe.

Lemon Zucchini Bread

Good flavor but the loaf is completely FLAT!! It rose a little during the baking process and then immediately fell upon taking it out of the oven. I'm no novice when it comes to quick breads and I honestly have no idea why it turned out like this; I question the very small amounts of leavening in the recipe.

Easy Oatmeal Muffins

I think some people are confusing muffins with cupcakes. This is a great basic recipe--moist, fluffy, with just enough sweetness! I followed the recipe exactly and baked for 20 minutes and they turned out perfectly. I also made a second batch using brown sugar and whole wheat pastry flour instead of white sugar and all-purpose flour, adding pecans and mashed bananas. It's a great recipe for additions.

Molasses Cookies

The flavor and texture were alright, but the cookies turned out greasy and flat! The only change I made to recipe was to use unsalted butter instead of margerine. I'm going to attempt the recipe once more and let the dough chill overnight. If it still doesn't work out, I'll move on to a different recipe as I really dislike baking with margerine.
