Breakfast Sausage
Absolutely delicious. Great flavor and made without all the garbage they put into store-bought sausage. I definitely think you get better results if you let the raw sausage mixture sit in the fridge at least overnight to let the flavors integrate. If I were to change anything, I would amp up the sage. I'll use this recipe every time I make sausage.

Chef John's Breakfast Sausage Patties
I thought the orange zest was novel, but I don't think it works for a breakfast sausage. There wasn't enough flavor there, and the orange and fennel combination just wasn't what I expect to taste in breakfast sausage. I followed the recipe almost exactly, right down to grinding the pork fresh, although I used a tangerine instead of an orange for the zest (that's all I had).

Asian Lettuce Wraps
Excellent recipe; I found what many reviewers found, that the flavor in the sauce needed a bit of a boost, so I added about 1 T of good fish sauce and it turned out wonderfully.
