Pork with Plum Sauce

I did not like it - the soy sauce was too overpowering. I made this for 1 person and cooked the sauce only about 10 minutes. The plums were soft by that point and the sauce was thickened.

Brandied Shrimp with Pasta

It was decent. I still overcooked the shrimp though. Maybe igniting the shrimp right after I put it into the skillet instead of after I cooked it briefly on one side and flipped them. I cut this recipe down to 3 servings and there was still way too much pasta so I would suggest cutting the amount of pasta at least in half unless you want to eat a plate of nothing but pasta. I did not have fresh tomatoes so I added a drained can of diced tomatoes.

Orzo with Kale

I don't like Kale but my boyfriend makes me eat it because it is good for me. So I was happy to find this recipe that combines orzo (which I love) with kale. I followed some of the suggestions given by others. I cooked the orzo the way we always cook orzo, cooked the kale the way we always cook kale, then combined them with the turmeric, lemon juice, nutmeg and parmesan cheese as a last step. We normally cook orzo by cooking minced garlic in oil for a few seconds until fragrant, then we put the dry orzo in and toast the orzo for a few short minutes. We also add some chili flakes, which some other suggested as well. Then we add slightly more chicken broth than orzo and bring to boil then lower the heat and cook covered until the broth is absorbed and the orzo is soft. As for the kale, we cook garlic in oil until fragrant, add a half cup broth, then bring to boil. Once boiling we add the kale and heat until the kale is wilted and the liquid is absorbed. The dish was good when I followed those steps and we both enjoyed the combination. We will make it again.

Chicken Vindaloo

I would give it 2.5 starts but that is not an option. I think this dish has potential but it just was not there. I agree with one reviewer that the dish has flaws. I took that person's advice and did not add the toasted spices so early in the process, but I don't know if that made a difference. But the chicken was finished well before the potatoes. In fact we gave up on them likely about 20 minutes after the chicken was done. One option would be to microwave the potatoes some first. However, to me even though we added all those spices I tasted mostly the cayenne pepper. My boyfriend on the other hand said the dish was bland. He suggested the dish would be better slow cooked so the spices can get into the chicken and the potatoes. So perhaps that would help. But as written I would never make it again. I love Indian food and with all the Indian spices I had high hopes though.

Orange-Coated Chicken

We really enjoyed this oh so simple recipe. I butterflied one chicken breast and cut the recipe in half. I did not change a thing other than using half the salt (based on a comment that it was too salty) and since it was not a whole chicken the cooking time was greatly reduced. The butterflied breast cooked in 20 minutes at a temperature of 350 to 375. The whole thing took me about 30 minutes from start to finish. This is definitely a great option for a very fast meal.

Tangy Apple Chicken Loaf

The prep time likely took longer than 20 minutes but my meatloaf was done cooking in 45 minutes vs 1 hour. But our oven runs hot so keep an eye on the temperature and don't just go based on the 1 hour time given in the recipe. The meatloaf was good and we liked the variety of flavors. No single flavor seemed to win out. I however, found the dijon mustard slightly over powering in the sauce. Personal preference. I saved the recipe and will make it again. I made no changes except we did not have poultry spice so I looked up what was in it and made my own.

Thanksgiving Beets

I have never cooked beets before and was looking for a good recipe for my first test. We got the beets without the greens and many of the recipes called for the greens, so I chose this one. It was FANTASTIC! We will definitely be making this again in our house. I made no changes to the recipe. My beets did take longer to cook but my sliced beets may have been thicker.

Onion Soup Pork Chops

This was quick and easy to make. But I can see why people said the pork chops were dry. I used thinner pork chops which were done by 30 minutes and the rice was still very watery. I took the pork chops out and let the rice cook for another 15 minutes. This is definitely not a dish for anyone sensitive to salt. I was very thirsty the rest of the night and threw out the left-over rice when I was done with my dinner. Since my pork chop was not dry I enjoyed my dinner but due to the salt I would not make it that way again.

Squash Braid

This was my first bread baking experience so it took me a little while. But I do believe I know why that one reviewer needed 5 cups of flour instead of 3. The directions do not say to drain the butternut squash after boiling it so perhaps that person mashed the squash with the water still in the pot. I say this because mine was hard to mix up with 3 cups and I had to stop and think about draining the squash when I was following the directions. Unfortunately I thought I put just over a cup of squash in the mix, but after I braided the dough and was washing the dishes I realized I had used a 1/2 cup and not a 1 cup measure. So I think the bread may have been dryer that it was supposed to be. But I agree that the bread needs something. While I was eating it I thought perhaps the cinnamon spiced butter at Texas Roadhouse or apple butter would work great.

Turkey Sloppy Joes

I love this recipe. When I buy ground turkey I break it up into 6 ounce batches and freeze them for future individual servings of these sloppy joes. From start to finish it takes about 20 minutes and most of that is cooking the turkey.

Squash Cookies

Fantastic - they remind me of a pumpkin cookie I make around Christmas. I did the recipe exactly as stated except I only had 1/2 cup of raisins so I used 1/2 cup raisins and 1/2 cup cranberries. My boyfriend the squash lover will definitely enjoy these.

Stuffed Pork Tenderloin

This was so easy I was surprised it tasted so good. I do have one suggestion though. My pork tenderloin needed to cook longer on the bottom side even though the top was done, so the top ended up being crispy. I would suggest turning the tenderloin over half way through cooking.

Jackie's Sausage Soup

Unfortunately I did not have a chance to taste it fresh because I made it for weekday lunches and not dinner or a lunch at home. The soup smelled fantastic while cooking but I think the sausage was a little overpowering. Otherwise it tasted great. I cooked the pasta separately and added it just before I put the soup in the microwave.

Ramen Coleslaw

I made the coleslaw with red cabbage. The coleslaw was better after it soaked in all the flavor overnight. When I tried to eat it about a half hour after making it the coleslaw had very little taste. Unfortunately though I don't know what it tasted like with the sesame seeds because I bought some at the store but the store forgot to give them to me (happens to me often I find).

Sherry Sour Cream Chicken

Pretty good although I think 1 hour in the oven was overkill (some of the sauce was burned around the edges). The dish was easy to make, not complicated, smelled great while cooking, and tasted great.

I was hoping for something I could make with the few ingredients I had on hand and of course hoped it would taste good. Maybe it would help if I had been from Mexico but I did not care for this. I wish it tasted as good as it smelled.

Broccoli Cheese Soup

Fantastic when modified using raters suggestions! The soup was just as good as TGI Friday's soup which is my favorite. I gave it four stars only because I did not use the recipe as is (so many people had great suggestions). I cut the recipe in half (only one of me), used fresh broccoli, fresh garlic, and substituted half and half for the milk. I doubled the cheese and almost doubled the broccoli but did not have enough for double. I had some extra chicken broth that I needed to use up so I used that instead of water with the corn starch. Something to keep in mind. It seems like a lot of broccoli when you cut it up but the broccoli got smaller while it cooked.
