Marinated Turkey Breast

My boyfriend and I had a mini Thanksgiving, just the two of us, so I didn't want to do a whole turkey. I cooked a big bone-in turkey breast with this recipe and it came out just perfectly - despite the bottom burner of our oven breaking and having to use the broiler to cook it! The marinade is definitely a different taste than your classic holiday bird, but so lovely. The only change I made was to leave out the cloves, because I can't stand them. Great recipe that I'll definitely make again!

Tom Yum Koong Soup

I bought a package of Tom Yum soup mix and used this recipe to help me flush out the rather simple and bland sounding directions. My soup turned out almost exactly as it tastes at my favourite Viet-Thai restaurant! Thought I would be in for quite an ordeal, as the soup looks pretty complex and has a lot of exotic ingredients, but it was very easy and I was able to find everything at the local Asian market. I used a whole packet of soup paste and my favourite additions to this soup are shrimp, fried tofu and Thai eggplant (which look like tiny watermelons). Thanks for the recipe!

Mom's Coleslaw

I needed something simple and quick for a family dinner and this was perfect because not only was it very tasty, but it's made from pantry items you likely always have on hand. My only adjustment was that i added a tablespoon or so of dijon mustard to cut back on the sweetness and add a little zing. Also, I halved he recipe and just used bagged slaw mix, as I was in a time crunch.

Butter Tarts

I'd never made butter tarts before and thought they'd be difficult - these were SO easy and turned out great. As other reviewers mentioned, don't over fill as they rise quite a bit. I also added vanilla to the recipe (great idea), used homo milk instead of cream and used pecans and coconut in my filling. Thanks for an easy, tasty recipe!
