I love this recipe! Its great for the warm summer months. I have made some changes.... I use 1/2 tsp cumin as opposed to 1tsp. and I only use a few shakes of cayenne. I use only one can of beans ( otherwise its like a black bean salad with some quinoa. I also use a whole box of frozen corn which probably equals 2 cups. I also just use chicken broth as I am not a vegetarian. I have also added a couple extras to jazz it up a little for my daughter who didnt love it as much as I did..... I cut up an avacado add some reduced fat feta and squeze some lime juice over it!!! ( I also ommit the cilantro in her portion since she is not a fan) delicious- enjoy!!
