Slow-Cooker Corned Beef and Cabbage

A success! I added some peppercorn spice rub to the top of the beef and followed the rest of the recipe exactly, except I didn't have an onion. It came out great and wasn't tough at all. My cabbage didn't get quite done in an hour, but I think that's because I had to unplug my crock pot and transfer it so it cooled off a bit too much. Fantastic easy way to do a corned beef dinner.

Ten Minute Szechuan Chicken

Took a lot longer than ten minutes to cook! Very good though and came out delicious. Added snap peas, water chestnuts and peanuts to round out the meal. I'm not a great chef but this came out exactly right!

Cindy's Awesome Clam Chowder

Didn't taste very clammy, even with the addition of clam juice. The five potatoes called for were way too many. This turned out more like a potato/bacon chowder. It was still good- just didn't taste like clam chowder. Omitted the carrots. Took 90 minutes to prepare and cook.

Chicken Meatballs and Spaghetti

Great recipe! All who ate it loved it. I thought the sauce could have used more diced tomatoes. Also I couldn't find chicken so I used turkey. And I used Italian seasoned breadcrumbs and some Tomato Pesto seasoning instead of the Italian seasoning. Next time I'll use more diced tomatoes. A keeper and will definitely make this one again!

Corn Pudding II

All four of us liked this. Even my five and eight year olds liked it- and they hardly ever like anything if it doesn't come in a pizza box or a Happy Meal bag! Very easy to make, and delicious.

Awesome Roast Beef

The beef was very tender and the broth was quite tasty. Overall this recipe wasn't as good as I thought it would be from reading the other reviews. I probably wouldn't make it again.

Connie's Zucchini "Crab" Cakes

These were delicious. I used the griddle to cook them and that took a long time. Probably cooking them in an oiled pan would work better. I will definitely make these again! (I even had two for breakfast the next day!)

Pumpkin Cookies VI

These are delicious. I've made them twice. The second time was for my four-year-old son's "snack day" at his pre-school. The kids and teachers loved them! I used golden raisins so they would blend in because my kids say they don't like raisins. But they gobbled these cookies up. This is a great recipe!

Black Chocolate Cake

The only substitution I made was I used applesauce instead of the shortening. The cake has a good consistency, but got very sticky and gummy on the bottom, even though it was baked. I think there's too much baking soda and baking powder in it, because there's a strange extra flavor and I think that's what it is. The texture and consistency are much more moist and dense than a cake mix, which is good in my opinion.

Best Buttercream Frosting

What???????????? I did not care for this frosting. The sugar never dissolved, making the frosting gritty. The directions said to cook the flour and milk until it formed a ball... it never did and I gave up. (A ball??) After the frosting was on the cake it turned into kind of a crunchy, greasy unappetizing mess. Not a recipe to use again.
