About this Cook
I have two young sons and a busy schedule. I like to cook but the kids only like "kid food". Someday...
My favorite things to cook
Mexican soups/chilis
My favorite family cooking traditions
My mom outdoes herself every year cooking Thanksgiving dinner. She's amazing!
My cooking triumphs
The birthday cakes I've made through the years... Batman, Winnie The Pooh, Thomas the Tank Engine, Star Wars (2), etc.
My cooking tragedies
I frosted the huge Harry Potter cake for Jacob's 4th Birthday Party the night before the party and put it in the oven because there was no room in the fridge. The next day I turned the oven on during the party to pre-heat for the chicken nuggets I was going to serve, forgetting that the cake was in there, and all the frosting melted off the cake!! I had extra so I fixed it up as well as I could. :-)

Slow-Cooker Corned Beef and Cabbage
A success! I added some peppercorn spice rub to the top of the beef and followed the rest of the recipe exactly, except I didn't have an onion. It came out great and wasn't tough at all. My cabbage didn't get quite done in an hour, but I think that's because I had to unplug my crock pot and transfer it so it cooled off a bit too much. Fantastic easy way to do a corned beef dinner.

Ten Minute Szechuan Chicken
Took a lot longer than ten minutes to cook! Very good though and came out delicious. Added snap peas, water chestnuts and peanuts to round out the meal. I'm not a great chef but this came out exactly right!

Basic Flaky Pie Crust
Had a heavy shortening taste which was unpleasant. Very crumbly also.
