Low Carb Jambalaya

I read some of the reviews before I made the recipe, so I added riced cauliflower, 2c. okra, increased the chicken broth to 3c, increased the Cajun seasoning to 3T, and increased the shrimp to 1 1/2 lb. My chicken-hating husband had 2 large servings [I left the chicken at 1 lb], our 21-yr-old grandson who lives with us had 2 very large servings, & I had a bit more than my usual sized 1 serving. Everyone loved it!! I'm trying to decide if I want to make a double recipe next time & divide it before I bring our supper for that night to the table. It's so good fresh I'll really have to thing about doubling it so I can put the saved half into a vacuum heat-sealed bag to have a delish supper in the freezer.

Yummy Sweet Potato Casserole

I used part of the recipe & made a lot of changes to it - I baked 5 sweet potatos, then peeled & mashed them, blended in 1/2 c. dark brown sugar not packed, increased vanilla to 1 tsp, added 1 tsp cinnamon, 1/2 tsp fresh-grated nutmeg, 1/4 tsp ground cloves, 1/4 tsp sea salt, 1/2 c evaporated milk, 2 eggs, 4T soft butter; topping was 1c packed dark brown sugar, 1 1/2 c pecan pieces, 3T butter. Baked at 350 for 30 min. The family loved this version.

Roasted Beer Butt Lime Chicken

I'm allergic to onions so I substituted a chunk of a green apple for the onion and I mixed 1/2 cup of water with the same amount of beer for steaming. Otherwise I followed the recipe exactly. My family all loved it. I gave it 4 stars instead of 5 because of my substitutions - I didn't feel it was fair for me to rate the recipe based on my substitutions, but we all thought it was delicious. We have no small children - the youngest at home is almost 21, so everyone eating this were all adults. I'll make it again but next time I'm going to use half a peach in the neck and use all water. For my oven 90 minutes was long enough to cook the chicken.

Pasta Primavera with Smoked Gouda

I always substitute extra garlic for onions because I'm allergic to onions. I also put in the broccoli slaw in a bag from the grocery to add more veggies. The whole thing turned out wonderful, & my family asked me to be sure & make it again!!
