Winter Fruit Salad with Lemon Poppyseed Dressing

The dressing was delicious! I am a big fan of popyseed dressing, but never knew I could make my own so easily. I made the recipe exactly as listed for a family party. There was an empty bowl at the end of lunch. Everyone loved it.

Traditional English Muffins

Wow, these English muffins were fantastic! I bought farm stand honey & jelly to give as gifts for Christmas and was looking for something homemade to go along with them. I made these muffins, exactly as the ingredients called for. I did let them rise a few times as someone suggested for the extra nooks & crannies and dusted the top and bototm with corn meal. I got a call from every person I gave these to the next day with rave reviews. My husband was so jealous I had to make him a batch. Don't let the yeast and rising dough scare you. These were easy to make and were delicious. I have been told I have to make them every year now. New tradition! Thanks

Orange Pecan French Toast

This french toast is delicious. I made this for a Mother's Day brunch and it was a big hit. My guests found it to be more like a cinnamon bun, but loved it. I prepped it the night before and put it in the fridge. I was worried the next day because all the liquid was absorbed into the bread, but it came out perfectly. I can't wait to be invited to a brunch so I can make this for others! Thanks for the recipe.

Carrot Pineapple Cake I

I made this to take to an Easter dinner and everyone loved it. I made it exactly as the recipe stated, except for swapping in 1/4 c of unsweetened applesauce for 1/4 c of the oil. I think next time, I will even do 1/2c of applesauce to 1/2 c oil. You just don't need all that oil. The frosting was great as well. I had enough to frost 2 8 inch layers. I put the walnuts on the sides like the photo, so the sides could be a bit thinner on the frosting. My husband asked me to make this again for his birthday in a few weeks.

Pistachio Cream Puffs

I made these last week to bring to a St. Patrick's Day party. Based on the comments, I made the puffs a bit smaller. Although they did taste good, I ended up not bringing them because I did not feel they would hold up well on a table all night. After making several for my kids to eat after dinner, it seemed as though the pudding got a bit watery. I think these are good if you plan to serve immediately. My kids did love them though.
