Strawberry Cake from Scratch

This tasted okay. I was kind of disappointed. I wanted a melt in your mouth light and fluffy strawberry cake. Instead what I got was a thick dense cake. It tasted like a strawberry flavored pound cake only more dense and thick. Also I used a 9/13 inch glass baking dish. It took 50 minutes to bake this in the oven which is twice as long as what it said to bake it for. I have a nice whirlpool gold oven that works great so it wasn't anything to do with my oven. I won't make this again.

Shrimp Scampi Bake

My husband loved this and thought this tasted just like Red Lobster when I made it. That was the best compliment I've gotten from him! I thought it was good but it needed more garlic. (I used freeze-dried garlic so that may have been why.) It was my first time making a shrimp dish with raw shrimp. The store only had cooked shrimp and raw shrimp with the shells on, so I went with the raw shrimp and I had to de-shell and de-vein the raw shrimp myself in icy cold water. It was pretty simple but time consuming. I really liked the advice of one user and used a couple handfuls of panko bread crumbs and parmesan cheese over the top. I did half with the bread crumbs and cheese and half without. The breading was really good too. Overall it was very good either way!

Taco Salad III

My husband and I loved this taco salad! The only changes I made were I used black beans along with the pinto beans because we don't like kidney beans. I also added a can of corn. I took the advice of another reviewer and mixed salsa with sour cream. I also had a bottle of Hidden valley salsa ranch and used that as well. I kept the lettuce, mission tortilla chips and sliced avocados separate from the other taco salad ingredients so the avocados will stay fresh and the lettuce and tortilla chips will be crispy for tomorrow. I added the lettuce to my plate, then I topped with the mixture and then added avocados and the sour cream and salsa mixture and then a little of the hidden valley salsa ranch dressing and then topped it with crushed tortilla chips and mixed it all together on my plate. It was absolutely delicious! My husband loved it and so did I. I will definitely make this again! :)

Grilled Chicken Salad with Seasonal Fruit

My husband and I thought this recipe was pretty good except for the salad dressing. I made the mistake of mincing half a red onion for the salad dressing and it was way too much onion and the taste was too strong. We ended up eating it with zesty italian dressing. I cooked the chicken in the George Foreman grill too and that turned out good.

Sweet Potatoes 'n' Pears

I thought this recipe was okay. It would have been better without the pears. The pears gave it a weird texture. I would make it again only without the pears.

Pot Roast Caribe

I really liked this pot roast a lot. The sauce was delicious! The pot roast was also nice and tender. Since my husband didn't like it and didn't want me to make it again, I have to give it 4 stars. He likes a stronger flavor. I was hoping to make it again someday but I just wanted to let you know that I really liked this recipe.

Mum's Irish Apple Pie

This was the best apple pie ever! I did go with what one reviewer said for the apple topping and I added a 1/4 cup of brown sugar and I changed the nutmeg to apple pie spice. The crust was soo delicious! It tasted like shortbread cookies. Yum! My husband liked this apple pie so much that he joked that he wanted me to make this once a week. Thanks so much for sharing this recipe. It's a winner and a keeper!
