Chef John's Buttermilk Fried Chicken

Thought this was below average in flavor and not traditional enough for me. I think the sage was overpowering - took away from the other seasonings. I doubled the seasonings in the batter and there was still no punch.

Baked Teriyaki Chicken

It was delicious. My husband, who's very hard to please and often thinks dishes with sugar in them are too sweet, loved this dish and said it was "really great." I made this with the restaurant style fried rice and some asparagus. My thighs were boneless and skinless, since that's what they had at Pavillions. This cut my cooking time in half to a total of 30 minutes. When i make it next time, I'll drain some of the juices out of the baking pan at the 15 minute mark.

Best Big, Fat, Chewy Chocolate Chip Cookie

I use Ghiradelli's Bittersweet 60% cacao chocolate chips because I'm a chocofreak. Then I lessen the sugars just a tad (a teaspoon, perhaps). I end up with the most orgasmic chocolate chip cookie imagineable. I call it the adult version. I have thrown away all of my other recipes for chocolate chip cookies. If you're a lightweight on the chocolate, I suggest using Ghiradelli's semisweet chocolate chips and keeping everyting else the same. Also outstanding.

Low-Fat Blueberry Bran Muffins

Was not expecting a bran muffin to be this tasty, moist, and satisfying. I used all wheat flour, 1/2 teaspoon baking soda and 1 1/2 teaspoon of baking powder. Also added 1/2 cup of blueberries. To me, these are best when fully cooled the next day. Yum! I'm ready to try these with craisins.
