Sweet Potato Casserole VI

I loved this recipe. I changed it a little to adjust to my personal style of cooking and taste. I boiled the potatoes in a little bit of water, butter, sugar and vanilla. As they cook more water will be produced by the potatoes. I mashed the potatoes and added more sugar and some of the water from the boiled. I only added one egg and the 1/3 milk. For the topping I used the remaining water from the boiled added the flour and pecans. Stirred untl thick. Added the mixture to the mash, baked for 30 mins, added marshmallows and baked for another 15 minutes and YUMM!

Buttercream Icing

This is a great recipe, but I had to cut on the sugar. I used 2 cups of sugar, all butter and doubled the vanilla. The only downside is that because I used all butter, icing stated to melt. So I am thinking to use 1/4 cup of shortening next time to see if that holds it together for longer, I will use then 3/4 cups of butter. I also added one extra tbsp of milk and 4 drops of coloring, it turned out perfect!

Country Fried Steak and Milk Gravy

I followed the recipe and made some modifications. I added some seasoning to the flour, salt, pepper, garlic salt, ms. dash original blend. I think everything else I did it exactly the same, the only think I would do differently next time is that after battering the steak in the flour, I would also use another style of crumbs. It will make it more crunchy or even instead of the flour. Not sure, the coating was too heavy, or maybe it was I am not used to it.

Mom's Country Gravy

I am rating this 3 stars for several reasons. First I will admit that it was my first time making gravy and I had some problems with lumps, which I resolved quickly with the blender (sorry, but I had no experience in mixing the milk so it was lumpy). But that is not why I am giving it 3 starts. The gravy "as is" was very bland, I had to seasoned more with salt, pepper and garlic powder. I think next time I will also add some beef burlioun. Also, it tasted a lot like flour (which the spices took away after some point). I didn't use oil, I used the drippins from country steak fry I was making, but wow is it heavy! Next time I will just use butter (I think smart balance or I can't believe is not butter will be good, I have gotten used to use it instead of regular butter).

Broccoli Chicken Divan

It was a good recipe. I was trying to find the best broccoli caserole recipe I could find and this did it. I made it without the chicken and added potatoes instead. Next time I will try it with the chicken. I also added sour cream and lots of more cheese. I actually cooked the sause separately and then added to the broccoli which was already cooked along with the potatoes. Oh, I also used maybe 1/2 cup of whipped cream and then stirred a little milk if needed. That made the sauce so much creamier. Please add some salt and pepper, as well as onion and garlic when cooking the broccoli, it will not be blend. Overall it was a great starting point for me.

Yummy Candied Yams

Thank you so much for this recipe. I have never made candied yams or eaten candied yams not even from a can. But my hubby loves them and I was making them for him for the very first time the other night. This recipe was a great help. I did made some modifications. I didn't add any water, only the butter, I added the sugar, some vanilla, nutmeg and cinamon. It was great. My family and friends were literally asking for more, but I didn't have enough for so many repeats!

Best Chicken Ever

This was a great recipe, my family loved it! After reading some of the reviews I decided to make some modifications, I added ranch dressing mix into the sour cream and placed the chicken in the refrigerator for a few hours before cooking. I also seasoned the bread crumbs (I used italian bread crumbs, since I didn't have cornflakes) with garlic salt, pepper, ms. dash original blend and garlic powder, all to taste. I also drizzled melted butter over the chicken to help browing. It was great!

Southern as You Can Get Collard Greens

I tried this recipe and it was great! I am not a Southerner, however I am dating a true Georgia boy and he loves his greens. This recipe was really easy to follow, especially for someone that has never even bought collard greens before. The only thing I would add is that the greens need to be watch throughly before cooking. Also, I used turkey necks instead of the ham hocks (it was his preference). I simmered the necks on chicken broth and with half of a chopped onion, salt/pepper to taste for several hours and then added the greens and simmered for several more hours. I did added a tbsp of brown sugar and vinegar. He loved them!
