Butternut and Acorn Squash Soup
I made a similar recipe last night. If I use Buttercup squash, I rarely have to sweeten it at all. Rather than ground cinnamon, I use marjoram & ground cayenne. The heat w/the sweet of the squash is yummy. This time I peeled the squash and put it in my crock pot on high for 3 hours w/all ingredients but the cream cheese. When I got home from work I added the cream cheese & used my immersion blender. Smooth in seconds & so yummy!!

YUMMY! I made this last night & followed the recipe with a couple additions. I added grape tomatoes cut in half on top. Then I sauted about 1/2 of an onion with the garlic in a little butter then added the rest of the butter to melt before drizzling it over the top. I've never cooked shrimp in a way that you couldn't really see it change color so I was a bit nervous not knowing if it was cooked so I left it in a bit longer then put the oven on broil for a bit as well. It was delicious & I will make this dish again & again. Yes, I too have it in my frig and can't wait to heat it up for lunch leftovers!

Caprese on a Stick
I make something similar as a garnish for bloody marys on long skews but use whole grape tomatoes & sprinkle lightly w/dry italian dressing mix before the olive oil, adding a little balsamic, pepperoni, pickles, jalapenos, banana peppers, shrimp, etc. I usually let them marinate overnight
