i used fresh spinach as i never buy frozen veggies... i wilted it by saute-ing 2 cloves of garlic then adding the entire box (10 oz) of spinach a little at a time.. it will all eventually fit into a small pan as it reduces by more than half.. then roll it in a kitchen towel and wring it out. also, rather than using the soup mix i minced onion as per another reader's comment and used the garlic, therefore the mix wasnt needed. i dont like water chesnuts, so i eliminated this part. awesome and easy dip, and my house still smells like garlic... yumm
