Cheesy Avocado Bites

These are so good! I made them as a snack but ended up eating so many they became dinner. I made as written and think next time I will add a little salt and some garlic. I will also try to slice the bread a little thinner.

Slow Cooker Tomato Sauce

This sauce is fantastic! I've made it twice and can't wait until I have enough tomatoes to make it again. I used a combination of types, just whichever I had too many of. I did not add any cayenne because it would have been too spicy for me, so I used a couple of shakes of red pepper flakes. Yes, it is somewhat thin and chunky. I lived in Italy for a couple of years and that's how true Italian sauce is! This is the closest thing I've had to the real thing since leaving there.

Slow Cooker Pot Roast

This is my step-son's absolute favorite meal (in fact I put it in the crock pot just this morning!). I use low-sodium gravy mix, and cooking wine instead of water. The recipe I have always used does not call for coating the roast with flour so I haven't done that, but will definitely give it a try next time.

Cherry Cheese Delight

I just made this for a family gathering and everyone loved it! The crust had a wonderful flavor, and though it did get kind of hard, after it sat out for about 15 minutes I had no problem cutting it.

Easy Pie Crust

I was excited to try this crust because I'm lousy at rolling dough. Unfortunately, I took the advice of some reviewers and used olive oil (actually half olive oil and half veg oil). I used it for a quiche this morning and could really taste the olive oil, so much so that I could barely finish my serving. However, that is not why I gave this only 3 stars. Though the crust was extremely easy going in, it was not coming out. It basically crumbled apart on me. Because it was so easy and I think it may have had a good flavor if not for the olive oil, I will be trying it again and hopefully will have better luck with the texture.

Microwave Pralines

For quick and easy (which is why I gave it 4 stars instead of 3), these were pretty good. However, they really don't compare to the Texas Pralines found on this site. They taste OK but are grainy and crumbly. I may make them again if I'm in a pinch.

Herb Roasted Pork

This was a hit! My pork loin was only about 2 1/2 lbs but I made the full amount of sauce. Unfortunately, the loin got done so quickly I didn't get a chance to baste it, just drizzled the sauce on before serving. Looking forward to trying again!

Sinfully Delicious Chocolate Pie

This is time consuming but worth every minute! I get so many requests to make this. It's VERY rich though. One pie will usually serve about 12 people.

Asian Beef Skewers

We love these. I have a hard time finding flank steak and it's expensive so I've used cheaper cuts and it's still very good, though a little tough sometimes if I go too cheap. We've also substituted with chicken, which I think I like even more.

Coconut Granola Bars

These are really good! The only problem I had is that they got too done. I used a metal pan the first time and baked for 25 minutes. I have since discovered that what works for me is to use a glass pan and bake 23 minutes at 325. Great flavor though and very easy. I tried using dried blueberries instead of chocolate chips the second time and prefer them that way. I also don't put in the sunflower seeds or sesame seeds.

Glazed Ham

I just made this for Easter and everyone loved it. It was a tad sweet for my taste, but that's just me. It was the first time I've made a ham and didn't realize how much fat is on a shank ham, so when I pulled it out of the oven after 8 hours I was shocked at how little meat was left after removing the fat. I had a 10 lb ham and was planning to feed 13 people. What was left was not enough to do that so I had to grill 6 chicken breasts and we ate every bit of both. It was easy though, and a hit, so I will make it again with the knowledge that I need about 1 lb per person.
