Rhubarb Muffins

Great recipe!! Made these with fresh rhubarb from my garden and they turned out perfectly!! Very tasty, light, fluffy, and moist. The only change I made was to use chopped walnuts instead of sliced almonds in the topping.

Rhubarb Dream Bars

So yummy! After reading others' reviews, these were the modifications I made: 1 cup sugar. 3 or 3.5 cups of rhubarb. I also added a splash of vanilla, a dash of nutmeg and the juice of half a lime to the filling. And I used sweetened shredded coconut. with these quantities and additions, it was the PERFECT blend of tart and sweet, soft and crunchy. A very yummy, different bar. I will definitely make again as this is a new favourite use for rhubarb!!

Peanut Butter Temptations II

FANTASTIC recipe! These were a big hit at our gathering. As other posters mentioned - very easy and very tasty. Freezing the pb cups before pressing them into the cookie worked very well. Thought they had stuck to the pan, but a little nudge with the point of a knife and they popped out easily.

Carrot Cake II

Excellent recipe! I received many compliments on this cake. Many appreciated that it was so low in fat. (3 points per piece for those of you on Weight Watchers). I substituted part of the sugar for Splenda and only used 1/4 cup of nuts and raisins each. Very moist and tasty, especially with a low fat cream cheese frosting. I've frozen 2 pieces and will review how those worked out when I defrost and sample them. THANKS!!!

Banana Chip Muffins II

Very good muffins! I altered the recipe a bit when I made them. Added 1 tsp vanilla, reduced the chocolate chips to 1/4 cup, and reduced the sugar to 1/2 cup. Also substituted half that sugar with Splenda. Very easy recipe. Thank you!!
