Macaroni Salad

This was my first ever macaroni salad. I followed the recipe to the letter except for changing out yellow onion for red onion. It was fantastic! All the flavors blend together just right. Many people at our party loved it. I'll make it again for sure.

Refried Beans Without the Refry

I have made this many times. It's easy and economical, and leaves plenty of leftovers. I always think I'll freeze them but then they end up getting eaten. The only change I make is to add a full tsp of cumin, oh and I also decrease the salt to 3 tsp. This one is a keeper.

Garlic Chicken Fried Brown Rice

We've been making this for about a year now, and even my 2-year-old loves it. We double the amount of everything, and use half sesame oil and half olive oil, as well as throwing in broccoli or whatever veggie we have on hand. We also cook the rice ahead of time. It works fine if you make the rice in the morning, then refrigerate until you make the recipe. Tasty and healthy.

These were decent enough, but a little bland for our taste. I did add some worstishire and a couple other standard spices, but it still needed something. The rice was good with the meat, but I gotta say, upon first glance, when pulling the meatballs out of the oven, I thought, eww, they look maggot infested-- because of the rice. Not something I'd serve to guests.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

I loved this. It was so easy to make, and simply delicious. I made it twice in one week. I added a fresh garlic clove, a little crushed red pepper, basil and oregano, both times. I also used extra beans. This was my first experience with Swiss chard, and I'm happy to have found this recipe. Thanks!
