Slow Cooker Chicken Tetrazzini

Fussy for a slow cooker recipe, but yummy even following to the letter. I prefer to throw everything raw in the crockpot at noon (increase broth to 1c, decrease dressing 1/2 packet due to saltiness), leave it on low 6 hours and add 4 oz. cream cheese a few minutes before serving. I also add 6-8 oz diced mushrooms 20min before serving and shred the chicken. Yum!

Cranberry Corn Bread

Moist and tender and delicious as written, with delightful sweet/tart contrasting flavors. It was still a trace heavy and sweet for my taste--perfection when I cut 1/4c sugar and whipped the beegeebers out of the butter and sugar (white and light) the next time around. Texture is still delightful without the cranberries and substituting lemon juice/whole milk for buttermilk does just as well, too. All around divine corn bread. My keeper.

Tuna Noodle Casserole from Scratch

A very good recipe that just needed a tad more flavor interest. As others recommended, I added 3/4 tsp Thyme, 1/4 tsp nutmeg to the roux, as well as Morton's seasoning to taste and a dash of cayenne. I also shaved the butter back a bit to 3T for the roux, and the crumb/cheese topping doesn't need any butter at all. Really an excellent one-dish meal for a mom that's sick of stocking cream of mushroom soup.

Southern-Style Buttermilk Fried Chicken

Delicious, my new fried chicken favorite. Crisp and flavorful breading that stays on and is still perfect for a cold lunch after a night in the fridge. Dry ingredients were short for a nice and heavy double breading, so I increase the dry ingredient dip by 50%.

Chicken Enchiladas I

Really amazing flavor, love what the sour cream does for the sauce. I only made a few changes. I added 8oz sliced mushrooms, as I add mushrooms to pretty much anything. I substituted red enchilada sauce for the taco sauce. I also drained off most of the sauce (after mixing everything and simmering) and used it to drizzle over the enchiladas after they were in the pan--I prefer a drier "inside" and saucier "outside". Hubby doesn't generally go for Mexican, but this was a hit and has even made his request list!

German Marble Cake

Really fabulous. I took another's suggestion and added a small box of vanilla pudding (removing equal part flour) and made for a moist and delicious cake. Hubby isn't a fan of almond, so left it out and didn't miss it. The rum is genius.

Pork Chops with Raspberry Sauce

Very good eating, goes great with mojitos! Didn't have any raspberry jam, so used 12oz frozen raspberries and 2T karo syrup for the sauce--had to use 1/2T cornstarch to thicken after filtering seeds out with a sieve. Might add another T of Karo syrup next time. Also grilled the chops instead of frying, added 2T of olive oil to the spice rub for the chops to instigate a little char on the grill--very nice.
