Incredibly Cheesy Turkey Meatloaf

This was delish, even according to my picky 3 year old. I only had 1.3lbs of meat, so had to adjust the recipe slightly. I added more spices and a handful of oatmeal also. And on top I criss crossed ketchup and carolina style BBQ sauce. Came out so good and moist!

Grandmother's Muffins

OMG, these are amazing!! For such a basic no frills muffin, they are so good. I wouldn't even want to add anything to them :) We even had enough batter left after filling the large muffin pan to make a whole pan of mini muffins. YUMMY!!

Oatmeal Whole Wheat Quick Bread

I made this bread this afternoon, and it was my very first loaf of bread that came out good. It was terribly easy!! I didn't grind the oatmeal, and doubled the recipe per suggestions. It perfectly filled my standard bread pan. I was looking for a bread that didn't require yeast and/or kneading, since I am pregnant with a toddler "helping". Haha!! This was delish! Served with homemade chicken soup tonight and my family raved. enjoy!!

Russian Green Bean and Potato Soup

Just made this soup on the first cold autumn day, and boy did it go over well in my household!! The strange combination of ingredients had me intrigued, and since I love sourkraut I wanted to try it (I am pregnant and like sour stuff more than usual). It was really really really good!! I added 8 cups of broth (4 chicken and 4 beef) and was glad I did. Otherwise my version would have had no liquid. I also added an entire can of sourkraut per someone suggestion and it was great. Added tons of fresh dill.....just kept adding until I thought it was enough. Defintitely more than 1 tbls. If you like unique flavors, this soup is for you!!

Vegan Curried Rice

I just bought new spices (curry and chili seasoning) at Penzey's, and was anxious to use them. This was the perfect opportunity!! Turned out delicious. My changes: 1) Used brown rice (healthier and I find it yummier) 2) Per someone else's suggestion, I added sauted onions (larged diced onion cooked in pot instead of garlic b/c of hubby's allergy to garlic) and frozen peas. Added some zest and color 3) Added some whole milk at end to make moister/creamier. Overall, this dish is very flavorful. My new spices were fun to use and definitely were better than store brand I am used to using :)

Burrito Pie

This was delicious and very filling!! Made a few changes - used 1.5 cans of refried beans, as well as 1/2 a can of black beans and 1/2 can of corn. Also used whole grain tortillas (from Trader Joes) and doubling up on them worked really well. Made the recipe very mild - no chilles and no olives (I hate them). Couldn't find taco sauce in store, so used a packet of taco seasoning powder, which was very good in a pinch. Probably could have used more liquid as it was a little dry. Used cheddar cheese. Overall, this was very good, and my hubby requested that I make it again :)

Rosemary Ranch Chicken Kabobs

These kebobs were delish!! I am new to grilling, and wanted an easy winner chicken dish. This got rave reviews from my hubby and father. I only had balsamic vinegar, which worked fine. And substituted BBQ sauce for Worcestershire sauce (I have never owned that stuff!). Anyway, these are so so so good :)

Actually Delicious Turkey Burgers

I have made turkey burgers before, but they always tasted dry and bland. These were DELICIOUS!!! My changes included: 1) couple of swirts of BBQ sauce, 2) lots of cumin, 3) extra onion, 4) sprinkled paprika on top while cooking. They came out really really good, with lots of leftovers to freeze. Thanks!!
