Peanut Butter Cookies IX

I think these turned out excellent. The only change I made was to use 1/2 cup all-purpose flour and 1/2 cup whole wheat simply because I prefer to use the whole wheat and had more of it on hand. Mine needed to bake about 10 minutes and turned out wonderful. I will certainly make these again!

Caramel Apple Pork Chops

What a great fall recipe! The only changes I made were 1) to double the sauce ingredients 2) to add a bit of cornstarch at the end to help thicken it and 3) I put the chops in at 350 instead of 175 and once I added the apples I just covered it with foil. Definitely will make again!

Banana Oatmeal Cookie

I substituted 1/2 cup chocolate chips for the nuts and added a teaspoon vanilla. Instead of using 3/4 cup shortening I used just 1/4 cup and added 1/2 cup of unsweetened applesauce to make these healthier and they still turned out GREAT. My boyfriend had one when he got home from work and said it was like a muffin top and I agree.

Pork Chops with Raspberry Sauce

I doubled the seasoning mix so that I could thoroughly coat all four pork chops. I also doubled the sauce mix, and substituted basalmic vinegar for the white wine vinegar because I didn't have any. Love the constrast of the spices with the sweet sauce.

Chocolate Chip Banana Muffins

Extreme Chocolate Cake

So moist and delicious. I made this for my MBA class and it vanished very quickly. Everyone commented on how awesome it was. You only need a very small piece so this can serve many people!

White Chocolate and Cranberry Cookies

Taste is a 5 but they were not puffy. The cookies ended up flat, hence the rating of a 4. I think if making these again I would increase the baking soda or add salt hoping to make them rise more.

Chocolate Crinkles II

I followed the recipe exactly except I put the dough in the freezer for 45 minutes. I just took a spoonful of dough, dropped it into a bowl of powdered sugar, rolled it in the bowl until covered, and then in my hands. I had no issues with sticking doing it this way. Also, to grease the cookie sheets I sprayed Pam down the center of the sheet and then used my fingers to spread it around the entire cookie sheet. This left the perfect amount. My cookies did not go flat like others mentioned and turned out beautifully. I had no problems with the cookie sticking to the cookie sheet either. I don't get the "not chocolately enough" comments as I think they are fabulous! Just a matter of personal preference I guess.

Slow Cooker Chicken and Dumplings

I have an almost identical recipe from a cookbook but modified it. I use 4 whole boneless skinless breasts and up it to 3 cans of soup. For those who say it is lacking flavor I would suggest the "cream of chicken with herbs" soup by Campbells as that is what I use. I do not put in butter and put in 2 cups of water. I use two 12 ounce packages of biscuit dough and found 30 minutes is definitely not enough time for the biscuits to cook. My boyfriend and I love this and by increasing the ingredients we have leftovers to freeze. I'm making it today and adding carrots, garlic, and some spices as others have suggested to make it more hearty.
