Layered Chicken and Black Bean Enchilada Casserole

I thought this might be a little dull, but it was really quite good, and the kids ate it, too, which says something. I was happy to add this to my collection of mexican casseroles.

Braised Balsamic Chicken

I have not used balsamic vinegar before and this made a really zippy chicken dish that my husband I both enjoyed. It's kind of ugly, but tasty. I served with rice but I think next time I'll just serve it with french bread to soak up the juices.

American Lasagna

My husband told me to stop looking. This is going to be "my" lasagna recipe. This makes a very full pan of really great lasagna. I doubled the sauce and was liberal with it, but I froze a little to make spaghetti with later. Excellent recipe! Thanks a lot!

Korean BBQ Chicken Marinade

My husband I enjoyed this a lot, but it did not really remind me of the rice bowls we get at the mall. I made my own chili paste out of "pizza" chilis, sesame oil, vingegar, and salt. I was conservative with the chilis, but boy was it spicy. Not for the kids. It's a keeper, though.

Grandma Grippin's Brown Pudding

Granted...the flavor is good if you just eat the top, but it seems awfully strange to have the cooked bread part floating on hot sugar water. This recipe was a waste of the last of my butter and brown sugar!

Chicken Enchilada Soup II

This is a really good cheesy soup. Even my kids ate it, and my mom had to have the recipe for a party she was going to. It is simple, but very tasty.

Award Winning Soft Chocolate Chip Cookies

Wow! I have been testing different recipes to find "my" chocolate chip cookie recipe. This one is it. These cookies melt in your mouth. We couldn't stop eating them. Hmmmmmmm...maybe I shouldn't keep this recipe. :-}

Chicken Tortilla Soup I

This was a really enjoyable soup, and just as good the next day. A lot of ingredients, but easy to put together. I stirred a little sour cream into my last bowl and that was good, too. Highly recommended. Not a favorite with the kids, but they ate some.

Calico Beans

This was a good recipe and the kids really liked it. It was a nice improvement to baked beans, and it turned out quite colorful. Never thought I'd eat a lima bean, but I got the baby ones and they tasted pretty good.

Award Winning Peaches and Cream Pie

Oh, yeah. This was good. It really didn't seem like a "pie" to me, so I made it in an 8 x 8 square pan...but its a crime for this dessert to be so small. It needs to be doubled in a 9 x 11. This is a definite keeper.

Vanilla Ice Cream IV

This was really excellent ice cream. I used chocolate pudding instead of vanilla and it was great. I'm going to try to figure out how to cook the eggs first, though. This was a big hit at the party and I didn't have any left to take home. Guess I'll have to make some more.

Fajita Marinade I

This marinade was good -- it has a subtle flavor, but it was very enjoyable. The kids even ate it. I made mine with chicken. I didn't want to discard the rest of the marinade, so I added it all to the pan and then thickened it up a little bit with corn starch.

Caramel Filled Chocolate Cookies

My husband thought these were really great cookies, but I thought they were just so-so and very awkward to prepare. After a little trial and error, I decided that it worked best to leave the dough in the freezer for a little while, and to leave the cookies on the parchment paper until they had totally cooled. The rolos were a little "grainy" if that's the right word. I'm going to try them again with something else. I made a few with a piece of white baking chocolate in them and they were really good also.

Absolutely Sinful Chocolate Chocolate Chip Cookies

This recipe makes a good, soft, double-chocolate cookie, which I will probably make again. However, the title "absolutely sinful" is a little lofty for these cookies. They're just "good".

Blueberry French Toast

Irish Chicken and Dumplings

I have been looking for an easier version of chicken and dumplings that still tasted good. This is it. I got to use chicken breast! I would suggest cutting the chicken breast in pieces before it cooks, and cutting the potatoes small. Use a BIG pot. The dumplings pushed the lid off of my medium soup pot. Add a can of chicken broth if you want a soupier meal. The kids actually ate this. This will feed a big family!

Apple Crisp II

This was a really excellent apple crisp recipe and I think I'm going to adopt this one as my regular crisp recipe. I would personally only use about 4 or 5 apples for a 9 x 13 because I like the "crisp" part the best. Thanks for the recipe. It's a keeper.

Spicy Bean Salsa

Yum! I was a little skeptical at first, even when I was making it. But it turned out great and everyone at the party was going back for seconds and thirds and fourths.... This is definitely a keeper and a refreshing change from regular salsa.

Creamy Peanut Butter Fudge

I was a little disappointed in the texture (a little grainy) and it also didn't set right. I followed the directions exactly. They were o.k. in the frig, though. It was good -- just not terrific. The kids liked them, but the husband didn't care for them as much. I think I'll keep looking. Thanks!
