Corn and Black Bean Salad

This is a great start...but not nearly interesting enough. I added chopped bell pepper and MUCH more spice. I tripled the cumin and pepper. Also added more chili flakes for an extra burn. Thanks for the idea! I love it!

Bulgur Wheat with Dried Cranberries

Heed the advice from others that have said this is TOO salty! If you are using no-salt bullion, then it shouldn't be a problem, but most bullions in a jar and/or cube have a LOT of sodium. I loved the way that it smelled as it cooked, it reminded me of Thanksgiving. When it was done, I tried to counteract the saltiness by adding lemon juice and a little sugar. Completely destroyed it, so will try again later after I buy more cranberries. Good thing the ingredients are cheap! Looking forward to having the less salty version. :)

Whole Wheat, Oatmeal, and Banana Pancakes

Yummy! Much better than regular pancakes! These have great flavor and are super filling. I used applesauce instead of bananas, and my husband and I thouroughly enjoyed! We had a few left over so I froze them. Will try heating them up in the toaster. Thanks!

Pumpkin Bread I

I made this, took it to work and received many compliments. I put it in a bundt pan, and it was beautiful. Next time when I make it I will not mix it up so much, though. I think if you do it somehow makes it more chewy or rubbery. Walnuts are a great addition...

What a simple, versitile and TASTY recipe! I used a little less olive oil and not all of the egg yolks for a lower calorie/cholesterol version. Will absolutey make this again...!
