Loaded Cauliflower

Quick. Easy. Yummy! I left out the onion powder because I didn't have any, I used parmesan cheese, and I used no fat Greek Yogurt instead of sour cream.

Mock and Cheese

I will try this again as the texture was pretty good and the flavors melded nicely, just a bit too much garlic powder for my liking. Maybe try cutting that in 1/2. Otherwise, a good, low carb option.

Feta Artichoke Dip

Doubled the recipe using only 1 cup of mayo total as other reviews suggested. Baked it in a 9x13 casserole dish and then another 4 minutes under the broiler to brown the top a bit. Other than that I followed the recipe exactly. Even with only 1 cup of mayo it is really rich, but tasty -- a little bit goes a long way. It was a hit at our gathering. Maybe try it with non-fat greek yogurt instead of mayo for a lighter version.

Cameroonian Fried Spinach

Zucchini Egg Bake

Mmmm. Mmmmm. Good. This quickly became a favorite and something I can make quickly assembled with a variety of vegetables from the local farmers market and with fresh eggs from the neighbors. I saute the veggies in a cast iron skillet and then pour the egg & cheese mixture right over it and pop the skillet in the oven. Local eats and less mess to clean up. Perfect!

Homestyle Stuffed Peppers

Used ground turkey instead of beef, but otherwise followed the recipe exactly. Entirely too bland. Won't be making peppers this way again. Prefer my veggie version with spinach, mozzarella, and ricotta cheese.

Broccoli, Rice, Cheese, and Chicken Casserole

I used 98% fat free soups and brown rice in order to make this a little healthier. I also baked and shredded chicken breasts rather than use the canned. Other than that, I followed this recipe as is. It was a little runny, but tasted ok. Not high on my "make this again" list.

Strawberry Torte

Super easy and tastes just as good as it looks! I added a tsp. of Almond Extract to the cream cheese mixture and sprinkled sliced almonds on the top of mine. Yumm-O!

Dutch Babies II

I'd give this more stars, but mine always "deflates" right after I take it out of the oven. Could be because I use a glass pie pan instead of a cast iron skillet. Still, it tastes good and no one complains about it being flat.
