Strawberry Cake from Scratch

Wow. This was one of the best cakes I've ever made and eaten! I followed the recipe to a T and I followed what other reviews said to do: I sifted the flour and I separated the eggs. I also used real strawberries and smashed them with a fork (instead of the frozen). I made homemade cream cheese frosting and I cut strawberries up and placed them on top of the cake for decoration. Very very delicious and I got rave reviews on it with everyone that ate it! Thank you so much!!

Garlic and Tomato Tilapia

Great recipe, thank you so much! My 2 daughters, ages 7 and 3, ate it up very fast and loved it! And my hubby who usually doesn't care for fish, liked it! I brushed melted butter over the fish and seasoned it before baking by putting salt, dried oregano and basil on top. And I used canned diced tomatoes. Delicious!

Easy Honey Mustard Mozzarella Chicken

Very good chicken recipe. I will be making this often! Even my 3 year old who doesn't care for chicken, ate it. I didn't give it 5 stars since it is nothing spectacular and it's pretty simplistic. I turned the chicken over quite a few times and basted it while it was cooking. I also used shredded mozzarella since that was all I had on hand.

Chocolate Cookie Bark

I made this today and it is DELICIOUS! And so very easy! I used Trader Joe's chocolate sandwich Jo Jo cookies, half a bag of semi-sweet choc chips and half a bag of white chocolate chips. The peanut butter adds such flavor. I am looking forward to adding it to our holiday gatherings! I'm sure everyone will gobble it up.

Jean's Homemade Chicken Noodle Soup

I have made this soup for a couple people and received rave reviews! My mom was wondering what the secret ingredient was and it was the GINGER! You must use fresh ginger root for this. I slice it up and put it in the soup while it is simmering. Then I remove the pieces right before serving. It gives it such a fresh taste!

Chewy Caramel

This is an awesome caramel recipe! If you want firm, chewy caramel that you can wrap in wax paper, I suggest you cook it to the 248 degrees that some others have done. Otherwise, you will end up with very soft, runny caramel. I made a batch last night and I just finished cutting and wrapping it this morning. It turned out perfectly and tastes delicious!

Hot Fudge Sauce

Oh my this was exactly what I was looking for! Very very fudgy! If you are looking for the type of fudge that is almost "chewy" when you put it on your ice cream, this is it! It tasted exactly like the hot fudge at DQ!

Black Bean Vegetable Soup

Very good soup! My entire family loved it and gobbled it up. I did add more cumin, chili powder, and garlic, like the other reviewers. I also used chicken broth since that is what I had on hand.

Lower Fat Banana Bread II

This was delicious! I made 2 loaves... one with whole wheat flour and one with oat flour. They both turned out really well! The whole wheat tasted more "wholesome" and the oat flour tasted more sweet. I also used 3 bananas with each and only a tsp. of vanilla. I did not add walnuts since we do not like nuts in our breads. Thanks for the low fat recipe! I've been wanting to do it instead of using butter and I couldn't even tell that it was low fat!

Chocolate Zucchini Bread I

Delicious bread!! We loved it. Very moist and full of chocolate flavor. I had to use semi-sweet baking chocolate squares since I was out of the unsweetened squares, so maybe that made it more chocolaty? Thanks so much for the zucchini recipe. I am always looking for different ways to bake with it.

Zucchini Yogurt Multigrain Muffins

Very good recipe! My 2 girls (ages 7 and 3) loved them! I changed the flours to 1 cup of each white, wheat and oat flour. I am going to try to make them without white flour next time. I also used sour cream instead of yogurt, since we didn't have any. Thanks for sharing!!!

Three-Bean Salsa

Very very good bean salsa! My hubby loved it! He added some chopped hot peppers to his bowl but it was spicy enough for me the way it was. It gets better the longer it sits in the fridge.

Healthy Banana Cookies

These are edible but not that great. I tried them because I was craving a cookie but I didn't want all the sugar and fat. They turned out rubbery and pretty bland. But what can you expect with a diet cookie? My girls (ages 6 and 2) ate them but I think that they would eat anything labled as a "cookie". Oh and I replaced the oil with yogurt so maybe that's where the rubbery consistancy comes from?

Quick and Easy Eggs Benedict

This was pretty good and easy enough to make. I liked that you didn't have to use the stove for the sauce. The sauce was ok but there was something about it that tasted different from other eggs benedict sauces. We made it for a brunch I had with female family members and most of us liked it!

Sweet Potato Casserole II

Oh my, this was delicious! I cut the sugar to 1/2 cup, but other than that, I kept all the ingredients the same. I made sure to chop the pecans very finely and the topping turned out perfectly!

Party Punch X

This is a great tasting punch and everyone always enjoys it. However, I gave this recipe 3 stars because of the rainbow sherbet. I would not use rainbow because of the color it will make the punch. It will become a pukey green-brown color. We have always used lime or raspberry/strawberry sherbet. Just an FYI...

Butternut Squash Soup

Delicious soup! But like the others, I only added 8 oz. of cream cheese and that was PLENTY. I can't imagine what it would be like with 16 oz! I didn't add the cayenne because I wanted my girls to eat it, so I had that on the side for hubby. I did add something different that made it even more delicious: I sliced and chopped fresh ginger root (about a tablespoon) and added that to the onions as they were cooking in the butter. This added a nice taste to the squash and I highly recommend it!

Homesteader Cornbread

Very good cornbread! I made it exactly how the recipe says, except I soaked the cornmeal for 15 minutes. It turned out great and is good the next day with honey on top of it.

Slow Cooker Garlic Mashed Potatoes

Mmmmm, this was very yummy! I added some fresh cloves of garlic. I sliced them and put them in with the potatoes while they were baking. Then I mashed them all together and it was very garlicky, just how we like it. Thanks for the crockpot recipe!
