Quinoa with Chickpeas and Tomatoes

I used spicy cooked packaged chickpeas and also used cilantro instead of parsley and upped the cumin. Wow. I really thought it was delicious!

Asparagus with Parmesan Crust

Mmmmmm. I left out the vinegar but tossed the spears with the other ingredients then laid out single layer in oven. I think a broiler might be great as well. (same temp) I am not sure I left them in that long, maybe closer to 10 mins. They came out nice and crisp. Delicious side for stroganoff.

Homemade Chicken Fettuccine

I added onions and garlic to the pan with olive oil and a little tarragon. The dish was good but I think it needs something to "thicken" the sauce better. I used half and half and it curdled a little. Next time, I'm going to add some chicken broth to pan and a little flour/butter mixture before the cream and see if that makes a difference.

Heavenly Halibut

Wow, I really LOVED this one. I used halibut as described. I added some dried parsley and a little "Mrs. Dash" Really tasty and great for an easy meal for company. Easy, tasty, quick!

Quinoa with Mushrooms

Really liked this. Bought a large bag of quinoa and didn't know how to cook it. I added pesto to the sautee and after browning the quinoa, and adding the broth, I cooked with the sauteed veggies for 20 mins. Great as a healthier "pilaf." Note: don't use salt or powdered bullion. Too salty.
