Easy Cheesy Chicken I

It was EASY & Delicious! Like everyone else, I seem to have trouble sticking to a recipe as written, but all I changed w/ this one is I seasoned the meat with Dry Italian Dressing mix (as another member suggested) & it was great! Everyone liked it - even my picky 6 yo daughter & my 3 yo son! I served it over egg noodles & added broccoli as a side. The sauce was plentiful & was great w/ the broccoli too!

Shrimp Scampi ala Norelllaura

This was excellent. Easy & Simple. I did take the advice of some previous reviewers & 1) heated the bell pepper/red pepper prior to adding the garlic - 20 mins you'd end up w/ burned, bitter garlic 2) used less lemon juice (about 1 Tbsp) and 3) dusting the mixture w/ flour instead of dredging the shrimp & it was delicious. Just added salt & pepper upon finishing & served over penne pasta. Tangy, flavorful Perfection!

All Protein Meatloaf

Upon reading the previous reviews, I went ahead & left out the garlic salt entirely - just added fresh minced garlic instead & only used 1 Tbsp of Chili powder w/ this one. 2.5 seems excessive & my kiddos can't take that much spice ...yet! Otherwise - it was wonderful & had great flavor - & that's coming from someone who previously - since I was a child - HATED meatloaf! This is definitely a keeper.

Bruschetta Chicken Bake

Not outstanding, but definitely a great quick, basic meal. Plenty of flavor & interesting taste. My kids loved it, but thought that the bread crumbs didn't taste good so mushy. Something I will try next time I make this meal is to 1) leave the bread crumbs out until just prior to topping the chicken - to try to reduce some of the mushy texture my kids didn't like about it. 2) Sprinkle some of the cheese over the top of the bread crumbs as well.

French Bread

It would be nice to note that the prep time/cook time estimates on this are deceiving... The DOUGH setting on my bread machine was an hour & 1/2 long, so it's not like the recipe takes a TOTAL of 40 minutes from start to finish. It'd be nice to be able to prepare for that. All in all though, this recipe was perfect & was no trouble at all to make. I did use a previous bakers suggestion & added 1 tsp oil to the mix & it was delicious.
